We LOVE to grill year-round, but especially in the summertime. There are so many grilled goodies that you can make and then you have yummy leftovers. When we fire up the BBQ, we INTENTIONALLY grill extras of EVERYTHING so that we can have these quick and easy summer grill bowls. These bowls are perfect for healthy summer dinners. 

Easy Air-fried Fish Tacos

These easy air-fried fish tacos might need to become a weekly thing for dinners this summer. They’re so good, so fresh, so light, and so easy! Which is everything you are looking for in a healthy summer dinner! These air-fried fish tacos have all the toppings that make them restaurant-worthy, but whipping up a batch is as easy as popping the bell peppers and fish in the air fryer! You’ll of course thank yourself for charring the tortillas over the stove and whipping up a batch of my skinny chipotle cream, pickled onions, and cilantro lime ranch beforehand!

If you are looking for a summer dinner that is not only healthy but also delicious, you have to try steak pitas with romesco and herb whipped feta. These steak pitas with romesco sauce and whipped herb feta are HIGH in flavor — but actually so easy to throw together. I could happily stand over the counter dipping thin slices of grilled flank steak in romesco all day. But when I want to be all grown-up and make a meal out of it–one I can even serve to guests–this combo is killer. And STILL macro-friendly.

I love a cobb.  I OBVIOUSLY love chipotle peppers– as evidenced by the fact that I use this chipotle cream on like 90 percent of my meals. This chipotle grilled chicken and mango cobb is a perfect, EASY summer night salad!  If you keep this delicious and SUPER LIGHT cilantro lime ranch on hand like me, all you really need to do is grill some chicken and chop for a few minutes while it cooks!

I honestly haven’t met a taco I didn’t like. Fish tacos. Chicken tacos. Carnitas tacos. Maybe it’s a southern California thing, but I’m all about a helping of tasty tacos. One of my fave healthy summer dinners is a helping of shaved pork tacos with spicy mango slaw. It’s just so good! These shaved pork tacos are so yummy on their own. But, if you’re looking to round out your meal even more, try adding some fresh and easy Mexican corn salsa on the side. It’s one of our go-tos!

That way when your healthy dinner is thrown together, it’s like a dreamy restaurant-worthy dish. But it only takes five minutes! I will never tire of a good burger or chicken sandwich. NEVER. Always top of my list at a restaurant…and one of the best ways to repurpose any leftover protein we’ve got lying around at home. I can even turn a blind eye to the fact that the boys will be having theirs with zero (to one) toppings, and ketchup *tears*– because I’ll be too distracted loving MINE.

It’s so easy to make this soy-ginger salmon and Asian slaw, and it’s packed full of flavor. These two dishes are great on their own, but they pair together beautifully to create a healthy summer dinner! This salad is really crunchy, fresh, and healthy. Depending on what your macros allow, this salad is also delicious with toasted almonds, peanuts or cashews, avocado, mango, edamame, and toasted sesame seeds.

Quick BBQ Pork and Pineapple Tostadas

These quick BBQ Pork Tostadas are a healthy mash of Mexican, BBQ, and island fare. Because why not? Most of the prep for this quick and easy meal is in making the fresh pineapple salsa. But once that’s made, all you need to do is pile the rest of the ingredients onto your shell and your summer dinner is served!

Summer Salad with Arugula, Basil, Pasta, and Crispy Chicken

There is just something about a big salad packed full of all the summer flavors when it’s hot. That’s why I love indulging in this healthy summer salad with argula, basil, pasta, and crispy chicken. The sweet summer corn. Fresh basil. Avocado. That combo is especially RIGHT together. Then add to it– these pickled onions that I CANNOT GET ENOUGH OF AND YOU SHOULD KEEP IN YOUR FRIDGE AT ALL TIMES, the cool pop of cherry tomatoes and red peppers… and obviously the chewiest cavatappi pasta (my all time favorite shape right now) and crispy panko crusted EASY chicken for JUST ENOUGH indulgence.  And you can stretch the carbs as far as you need with plenty of greens or bulk it up with pasta and corn….. I’ll support you either way.
