Honey Chipotle Chicken Marinade

This quick and easy honey chipotle chicken marinade requires a simple chicken prep, whisking up the marinade, grilling, and done! It’s easy enough for a busy weeknight, but delicious enough to prepare for a special meal. And chicken tenderloins in this marinade pair well with so many of my favorite sides like Mexican spaghetti squash boats, fresh and healthy taco salad, and cauliflower rice bowls.  

Green Goddess Grilled Chicken

As long as you’ve got non-fat Greek yogurt, a large shallot, and a cabinet full of spices, you likely have everything you need to whip up this Green Goddess chicken marinade. For this recipe, I do recommend using fresh herbs, which is what the recipe calls for, but you can use dried in a pinch. You’ll want to let the tenderloins or breasts sit for at least 30-60 minutes before grilling, but if you can prep it the night before and let it sit in the marinade longer, that’s even better! This Green Goddess chicken marinade is so simple and delicious, and of course macro friendly.

My family loves this apple cider dijon chicken marinade because it’s so simple. It’s always been an eyeballing, throw-it-in-a-bag kind of thing. But this marinaded grilled chicken is also one of the foods we eat the MOST of…throw it into everything and anything… like this yummy panini, salads like my favorite Thai, watermelon, Waldorf, BLT salad flatbreads, pizzas, crunch wraps. It’s really that good. It’s why I’ve never been tempted to change up the marinade.

We cook so many breasts and tenderloins over here. But THIGHS. You guys. Where have I been? It is one of those cuts of meat that is foolproof. So juicy and hard to mess up. This BBQ soy ginger marinade was created for juicy chicken thighs. In our house, we love it in an Asian-style salad or rice bowl. Or you could add the chicken to the Asian Edamame Salad, Asian Chopped Salad, or Asian Slaw. Just build a big bowl of greens, add BBQ Soy Ginger Chicken Thighs and all the fixings.  You could also hollow out your favorite ciabatta roll and make a tasty chicken sandwich. There are just so many great ways to enjoy them!

You’ll have time to marinate for longer. But if you don’t, even 30 minutes will be great. And if you know me, I’m no planner so you can bet ours is usually hanging out on the counter for 30. Ha.

Greek Marinated Chicken

Another must-have for our family is this Greek chicken marinade. It’s easy! Nothing fancy. Whisk up your marinade and throw it on your chopped chicken tenderloin in this fancy ziplock bag. Squish it around and let it get all garlicky and herby and lemony and Greek-y. We like putting our Greek chicken on skewers and sending it to the grill. The perfect way to finish off your chicken is with a little bit of fresh lemon juice! YUM!

Easy Chicken Marinades

I don’t know if we just consume way more protein than the average family. But we can NEVER have enough grilled chicken hanging out in our fridge.
