It takes me back to the days were I would PILE nuts and cheese and fruit in my salad without realizing how high salad-calories could climb. HA! This one still checks all of the boxes, but keeps the macros on point.

This berry and goat cheese salad recipe has ingredients that won’t just sit in your fridge and not get used for anything but salad. That’s ALWAYS a win. We always have berries and nuts on hand for yogurt bowls and snacks… and if I’m feeling overstocked, it’s time for a berry salad!

How to Make Berry and Goat Cheese Salad

For Berry and Goat Cheese Salad:

  • Arugula (100 g)
  • Grilled chicken, chopped (100 g)
  • Strawberries, chopped (50 g)
  • Blueberries (50 g)
  • Red onion, diced (30 g)
  • Crumbled goat cheese (14 g)
  • Pistachios (15 g)
  • Fresh basil, chopped
  • Salt and Pepper to taste

For the Creamy Honey Mustard Vinegar:

  • White balsamic vinegar (I love to use a lemon balsamic*)
  • Non-fat Greek yogurt (7 g)
  • Honey mustard (4 g)

Pile all your salad ingredients together in your favorite salad bowl. For the dressing, it’s really as simple as whisking your three dressing ingredients together. Drizzle the dressing over your salad and it’s ready!

Serving Suggestions

For the grilled chicken, I usually recommend my bulk apple cider dijon chicken recipe because it’s so delicious and we always have it on hand at my house. Any of these other grilled chicken recipes would also be super tasty though!

Tart and sweet berries, creamy goat cheese, and salty pistachios tossed with peppery arugula in a creamy honey mustard dressing: Macro-friendly and delicious!

Ingredients

For the Berry and Goat Cheese Salad:

  • 2 cups arugula 100 g
  • ¾ cup grilled chicken chopped (100 g) (this is my go to grilled chicken recipe)
  • cup strawberries chopped (50 g)
  • cup blueberries 50 g
  • ¼ cup red onion diced (30 g)
  • 2 Tbsp crumbled goat cheese 14 g
  • 1 Tbsp pistachios 15 g
  • 2 Tbsp fresh basil chopped
  • Salt and Pepper to taste

For the Creamy Honey Mustard Vinegar:

  • 1 Tbsp white balsamic vinegar I love to use a lemon balsamic*
  • ½ Tbsp non-fat Greek yogurt 7 g
  • 1 tsp honey mustard 4 g

Instructions

  • Pile all salad ingredients in a large bowl. Whisk together quick dressing ingredients and drizzle over the salad. Toss and enjoy!
