Rotisserie chicken can be a lifesaver some days! With everything that’s going on during the week, dinner can become more of an afterthought than a planned event. That’s why I LOVE the easy, fast, and protein-packed option of rotisserie chicken. It can be used in so many different types of recipes on its own (or as a substitute for cooked chicken) and can easily feed a crowd. Here are some of my favorite healthy rotisserie chicken recipes for those busy nights when you just can’t (or don’t want to) cook the chicken in your fridge.

Healthy Rotisserie Chicken Recipes

I’ve picked up some tricks here and there while trying to feed my family healthy, filling meals on busy weekday nights. One trick I recommend is having Costco’s vacuum-packed rotisserie chicken breast meat on hand! It’s helped me in a pinch more than once and will be great for all these recipes. This list of rotisserie chicken recipes includes recipes that call for rotisserie chicken directly and also includes recipes with a note that you can substitute rotisserie chicken for cooked chicken. Either way, the recipes are all so tasty and I love them.
