Ingredients

  • 5 large leaves of butter lettuce (SO much better than romain or other lettuces for this soft and flexible and never bitter.
  • ¾ cup Rotisserie chicken breast – sprinkled with salt and pepper (100g)
  • 2 Thinly sliced radishes (20g)
  • ¼ Small avocado (20g)
  • 1 Thinly sliced mini cucumber (50g)
  • 3 Chopped green onion (10g)
  • 2 Tbsp. Fresh cilantro (5g)
  • 2 Tbsp. Fresh Basil (5g)
  • 2 Tbsp. Fresh Mint (5g)
  • 1/2 Sliced or chopped fresh jalapeno (10g)
  • 2 Tbsp. Mango, diced (28g)
  • 1 Tbsp. Red onion, sliced (5g)
  • 1 Tbsp. Trader Joes Spicy Peanut Vinaigrette, or use your favorite store-bought or homemade peanut dressing (15g)

Instructions

  • Lay out your lettuce leaves and top with everything you like! Drizzle with dressing or have it on the side for dipping.
