This Pickle de Gallo Chicken salad is the PERFECT snack, lunch, quick bite, etc. AND it’s great for meal prep because it holds up so well in the fridge!
It’s seriously so easy, and kind of a ‘lazy’ version of my favorite pickle chicken salad that so many of you have really loved. It’s perfect for days when you want minimal chopping and cooking (fewer dishes 🙌) but still want to enjoy something super fresh and yummy.

You’ll love this chicken salad any time of year, but it’s REALLY great for summer. When it’s hot out and you don’t want to turn on the oven, this will be a total lifesaver. The full recipe is posted below at the bottom, but if you want some tips on how to make it even better, keep reading!
What You’ll Need to Make Pickle de Gallo Chicken Salad
The ingredients for this Pickle de Gallo Chicken salad are super simple! The hardest part might be finding the Pickle De Gallo®, but it’s one of the main ingredients. If you can’t find it though, don’t worry. You can definitely make this pickle chicken salad recipe for a similar taste, and it still has good macros.

Here’s what you’ll need…
- Rotisserie or Grilled Chicken
- Pickle De Gallo®
- Low-fat Greek yogurt
- Lite mayo
- Yellow mustard
- Sweet relish
- Shredded cabbage
- Salt & pepper
And that’s it! If you decide to use rotisserie chicken, I like to use the big vacuum-sealed bags from Costco. Just make sure to season it up a little before using it. Just pick through the gross bits, season the chicken with salt, pepper, and a little garlic, then quickly sear it in a hot pan. Don’t cook it too long or you’ll get that nasty re-cooked poultry flavor, and nobody wants that.
How to Make Pickle de Gallo Chicken Salad

The great thing about this recipe is that the instructions are 2 sentences long:
Chop or shred your chicken well and add to a large bowl with the rest of the ingredients. Toss and stir very well to get everything combined.
And voila! You have the perfect chicken salad to enjoy all week long! This recipe does make 10 servings, so it’s great to make ahead for noshing any time of day.
Is this Pickle de Gallo Chicken Salad GF/DF?
This Pickle de Gallo Chicken salad is gluten-free, but it’s not dairy-free. To make it dairy-free, I love using Forager plant-based sour cream in place of the yogurt. If you want more dairy-free swaps, then reference these easy dairy-free swaps.
And while this recipe isn’t specifically dairy-free, I do have a lot of recipes on my blog that are dairy-free like this yummy dairy-free cava bowl or this dairy-free green sauce. So good.
Serving Suggestions:

This Pickle de Gallo Chicken salad is so good any way you serve it, but I personally love to eat it on rice thins/cake or, of course, our favorite chips/crackers.
If you want it more like a meal instead of a snack, you can also have it on a piece of toast or stuffed into a toasted pita. The options are endless.
Of course, make sure to store this in your fridge, and it’s best served cold!

Pickle De Gallo Chicken Salad
Ingredients
- 2.5 lb cooked white chicken rotisserie or grilled (1120g)
- 14 oz container of Pickle De Gallo® 400g
- ½ cup low-fat Greek yogurt 120g
- ¼ cup lite mayo 60g
- ¼ cup yellow mustard 60g
- ¼ cup sweet relish 60g
- 10 oz bag shredded cabbage 284g
- 1 ½ tsp. kosher salt
- ½ tsp. black pepper
