Pineapple Radish Salsa

Chances are, you’ve probably heard of or have tried some pineapple salsa before, but what makes this salsa a little different is the fresh radishes. I really enjoy the pungent, sweet, and crisp taste of radishes and I use them fairly often in my recipes, especially salads and bowls. It’s just a little something extra to ramp up the flavor and sneak in some extra vegetables. 

Pineapple Radish Salsa Ingredients

This recipe is full of flavor and freshness. Here are the ingredients you need to make this low-calorie pineapple radish salsa:

  • Pineapple, diced 
  • Avocado, diced
  • Persian cucumber, diced 
  • Radishes, diced 
  • Red onion, diced 
  • Jalapeño, diced 
  • Cilantro, chopped
  • Lime 
  • Garlic powder
  • Kosher salt

Equipment Needed to Make a Healthy Salsa Recipe

When I have a recipe that calls for a lot of dicing, I pull out one of my favorite kitchen gadgets, an alligator chopper. It makes cutting your vegetables quick and easy! I use my alligator chopper all the time and I can truly say that having that chopper is so worth it. I’m not usually a kitchen gadget person, but I highly recommend getting yourself one of these. 

How to Make Pineapple Radish Salsa

It’s crazy how quickly you can throw this recipe together! Here’s how to make pineapple radish salsa:

  1. Dice the ingredients. Using a knife (or an alligator chopper) dice the tomatoes, onion, cilantro, and jalapeno. 
  2. Combine the ingredients. In a bowl, combine the diced ingredients with salt and lime juice.
  3. Serve and enjoy. And just like that, you have delicious pineapple radish salsa! Enjoy it with tortilla chips, tacos, salads, and more.

Is this Pineapple Radish Salsa Gluten-Free and Dairy-Free?

This recipe is totally gluten-free and dairy-free! You can grab some gluten-free tortilla chips and dig in. 

And when it comes to making gluten-free tacos, burritos, or wraps, I don’t know why most gluten-free tortillas are so small! I was so happy when I found the burrito-sized Siete tortillas. I wouldn’t say the macros are anything amazing, but they’ve got really great, clean ingredients and are super delicious. The almond tortillas are my favorite, but the cassava option will be lower in fats.

Ingredients

  • ¾ cup pineapple, diced small (150g)
  • 1 medium avocado, diced (100g)
  • 1 Persian cucumber, diced small (85g)
  • 5 radishes, diced small (80g)
  • ½ medium red onion, diced small (80g)
  • 1 small jalapeno, diced small (25g)
  • ½ cup cilantro, chopped (15g)
  • juice from a lime (15g)
  • ¼ tsp garlic powder
  • pinch of kosher salt to taste

Instructions
