This Greek cucumber salsa is colorful and fresh, and it’s also super easy to make! Trust me when I say you’ll want this cucumber salsa in the fridge to tuck into pitas, throw on top of bowls, or even mix with a salad. It’s super versatile!

Greek Cucumber Salsa
I originally wrote this recipe to pair with these macro-friendly Greek pitas, but this Greek cucumber salsa was so good it was deserving of its own post.
The ingredients for this recipe are so fresh and yummy, and you’ll love having the extra veggies to add to your meals all week long. Plus, it’s so colorful and makes all your food look gourmet! I love food that’s colorful, fresh, and vibrant.

Greek Cucumber Salsa Ingredients
The basic ingredients for this Greek cucumber salsa are super easy to assemble! Here’s what you’ll need:
- Cucumber. I usually use Persian cucumbers for this recipe.
- Roma tomatoes. Some people like to use cherry tomatoes, but I prefer Roma tomatoes because they hold up better in the fridge.
- Red onion. You won’t need very much for this salsa, a small onion will work great.
- Red bell pepper. I like to use red bell pepper for flavor and color, but you can use yellow or orange too. I wouldn’t recommend green for this recipe.
- Olive oil. Use what you have on hand, but I love to use lemon-infused olive oil to make it extra tasty. I highly recommend the Baker and Olive brand. It’s one of my favorites, and you can get a discount through my link!
- Fat-free feta. You can also use reduced-fat feta (fat-free doesn’t always taste great to me).
- Fresh mint. Feel free to use as much or as little as you want.
- Kosher salt. (Redmond Salt forever and ever. OBSESSED).
- Ground pepper. Freshly ground always tastes the best!
- Lemon juice. I use an entire lemon in the recipe because I like the extra zip.

Equipment Needed to Make Greek Cucumber Salsa
I am not a kitchen gadget person, but there are a few that I just absolutely love. (Like my air fryer or my Ninja blender). Total game-changers. And making this cucumber salsa is super easy if you have an alligator chopper!
But for most gadgets like apple slicers or herb scissors (I totally get why people would love them), I’ve always just preferred to use a really sharp knife and cutting board.
But I have to admit…I LOVE my alligator chopper. It’s so easy to use, and it creates the perfect, tiny squares for salsa. And having the perfect little squares just makes it taste better to me. 🤷♀️ I even use it when chopping my tomatoes. Just slice them first before putting them through the chopper and really commit to the push.
One thing that people always ask me about when using the alligator chopper for salsa is how to clean it afterward because there are so many parts. And while I’m not saying YOU should do this, this is what I do…
I rinse it with really hot water and bang the metal cutting grate on the side of my sink until all the pieces fall off, then let it dry. A really eloquent system, ha! It’s also dishwasher safe, so you can add it to your dishwasher after you’re done making this cucumber salsa.
How to Make Cucumber Salsa
Making this Greek cucumber salsa is super easy and can be done in just a few steps. Here’s how to make cucumber salsa:
- Chop Your Veggies. Use your Alligator Chopper or a sharp knife to chop the cucumber, Roma tomatoes, red onion, and bell pepper.
- Add the Sauce. Toss your chopped veggies in a bowl with feta, mint, lemon juice, olive oil, salt, and pepper.
- Store and Enjoy. This Greek cucumber salsa lasts a few days in the fridge. Add it to wraps, pitas, salads, bowls, and more!
And that’s it! Now you’ve got a bowl of fresh, yummy veggies that you can to your meals throughout the week while still keeping things super light!
Is This Cucumber Salsa Recipe Gluten-Free and Dairy-Free?
Yes, this cucumber salsa is naturally gluten-free! However, it does have feta which isn’t dairy-free. If I were going to make this dairy-free, I would swap in my favorite dairy-free feta from Follow Your Heart. I can’t even really taste the difference.
The dairy-free feta isn’t as low in calories as reduced or fat-free feta, so make sure to take that into account when logging your macros for this cucumber salsa. It’s not a huge difference, and still totally doable though.

Greek Cucumber Salsa
Equipment
Ingredients
- 2 cups Persian cucumbers diced
- 2 cups Roma tomatoes diced; remove any juicy, seedy inners
- 1 cup red onion diced
- 1 cup red bell pepper diced
- 1 Tbsp olive oil lemon-infused is even yummier!
- ¼ cup fat-free feta (or reduced fat) I've recently decided that fat-free doesn't do it for me!
- ¼ cup mint (or more)
- ½ juiced lemon (or more, I like an entire lemon usually)
Instructions
- Chop all your veggies nice and small with your alligator chopper or knife.
- Place the chopped veggies in a mixing bowl. Top with mint, feta, lemon juice, olive oil, and salt & pepper. Stir to mix.
- Enjoy this Greek cucumber salad throughout the week in your favorite wraps, bowls, and more.
