These Oven Roasted Fries are super easy to make at home right in the oven! They’re crispy on the outside, while still soft and fluffy on the inside, and make the perfect side dish for your favorite burgers, salads, or sandwiches! 

About This Recipe

Okay, so I recently posted my Healthy French Fry recipe, and lots of you have been loving it! But I’ve also been getting lots of questions on how you can make these fries without an air fryer, so here you go! 

A few tricks to make this recipe the best. First, make sure to dry the potatoes really well! Boiling them in the salted water helps create a superior texture and flavor by cooking the inside to be soft and fluffy, while breaking down surface starches to produce an ultra-crispy, golden exterior.

Second, DO NOT, and I repeat DO NOT, overcrowd the pan! I love using this XL sheet pan, so I can spread them out evenly. Make sure all the fries have room in between them so the air can circulate in the oven and roast the fries (not steam them). If needed, use two smaller sheet pans.

These fries really are super tasty, and the extra step of boiling them before roasting is really worth it. Or if you have an air fryer, check out this recipe for an even easier version!

Ingredients and Substitutions

  • Russet potatoes: Chopped into large fries, no need to peel before (unless you just prefer)!.
  • Olive oil: Or you can use avocado oil.
  • Kosher salt: I love the Redmond or Maldon kosher salt! 
  • Garlic powder: I kept these fries simple with just salt and garlic powder, but feel free to throw in any additional seasonings you prefer!

How To Make

  1. Chop potatoes into large fries, no need to peel. Add them to a large pot of salted boiling water. Boil, uncovered for about 15 minutes or until tender.
  2. Carefully remove potatoes from water with a slotted spoon and lay them in a single layer on a sheet pan lined with paper towels. Pat them dry and transfer to a lightly oiled or parchment-lined sheet pan. Spread them out so they’re not crowded. Spray or drizzle with olive oil, and season with salt, garlic, and pepper. (Feel free to add paprika, onion powder, herbs, or any other seasonings you love if you want these more seasoned!)
  3. Roast in a preheated 425°F oven for about 30 minutes or until golden brown. Sprinkle with a little more salt and pepper. Garnish with fresh herbs and serve with a dipping sauce if you’d like!

Helpful Tips

  • Cut potatoes evenly: Try to slice your potatoes into even-sized fries so that they will cook evenly! Slicing the potatoes unevenly can cause some potatoes to not bake in time, while others will be overdone. 
  • Dry well: The potatoes must be dry in order for the olive oil and seasonings to stick! This also helps them get as crispy as possible in the oven. 
  • Don’t overcrowd the pan: Be sure to spread the fries out evenly on your sheet pan. Use an XL sheet pan, or spread between two pans.
  • Extra seasonings: Feel free to get creative and add any of your favorite seasonings here, too! Seasoned salt, paprika, onion powder, parsley…
