Ingredients and Substitutions

  • Butter lettuce: Butter lettuce creates the perfect base, in my opinion!. You can also use spring mix, arugula, or romaine if you prefer a little more bite.
  • Mini cucumbers: English cucumber works just as well—just slice thin for the best texture.
  • Avocado: Make sure it’s ripe but still slightly firm for clean slices.
  • Corn: Fresh corn is best here! You can use it raw straight off the cob for crunch or lightly grilled for extra smoky flavor. Frozen (thawed) or canned (drained) corn can work in a pinch.
  • Peaches: Look for ripe, juicy peaches for the best flavor. Nectarines are a great substitute if peaches aren’t available.
  • Green onions: Thinly sliced red onions can be used for a sharper bite.
  • Goat cheese: Feta is an easy substitute if you prefer a saltier flavor profile or just don’t like goat cheese.
  • Fresh basil and mint: You can swap in parsley, cilantro, or even dill, depending on your preference.
  • Pistachios: Provide a salty crunch that contrasts with the soft textures. Feel free to use almonds, pecans, walnuts, sunflower seeds, or pumpkin seeds—or leave them out if needed.

Dietary Adaptations 

  • Dairy-free: Simply omit the goat cheese or use your favorite dairy-free alternative cheese.
  • Make it nut-free: Omit the pistachios or replace them with seeds like sunflower or pumpkin seeds for a similar crunch.
  • Add protein: Turn this into a complete meal by adding grilled chicken, shrimp, or salmon.

How To Make

  1. For the corn: I just microwave my corn in the husk for about 4-5 minutes to cook. Then peel the husk off under cold water to cool it quickly before slicing corn off the cob. You’ll want to weigh/measure your corn after it’s sliced off the cob. Or, you can grill it, or even just thaw frozen corn if you’re in a pinch!
  2. Add butter lettuce to a large platter and top with everything else! Serve with your favorite dressing or even just a great vinegar! We love this tossed in the peach white balsamic by Baker and Olive. Whisk it with olive oil for a legitimate dressing (2/1 vinegar/oil), or use it straight if you want to keep things light. Don’t underestimate the importance of some salt and pepper.🙌🏻
  3. PS: Another shortcut dressing we love for this is mixing equal parts store-bought pesto with this balsamic vinegar. (I usually use the peach or lemon flavors, but they’re ALL good). So delish.
