I love having healthy and delicious recipes in my bag of tricks that can be used in a variety of ways. This spicy mango slaw is crunchy enough to hold up in the fridge for a couple of days, and versatile enough to be eaten on sandwiches, tacos, with grilled proteins, or even on its own. Make it!
What You’ll Need to Make Spicy Mango Slaw:
- Dairy-free or nonfat Greek yogurt
- Lite mayo
- Sriracha
- Rice vinegar, or a fruit-infused like I always do!
- Garlic powder
- Salt and pepper to taste
- Bag cabbage slaw or shredded cabbage
- Small bell pepper, diced
- Small mango, diced
- Bunch of green onions, chopped
- Bunch of cilantro, chopped
- Jalapeño, seeded and diced
How to Make Spicy Mango Slaw:
Make the dressing first. Combine dairy-free or nonfat Greek yogurt, lite mayo, sriracha, rice vinegar, garlic powder, salt, and pepper right in the bottom of a large salad bowl so you’ve got one less dish to wash! If you don’t want to use mayo in your dressing, just swap in some additional plain yogurt of your choice. The mayo just adds a little bit more richness, but extra yogurt is fine too. For this recipe I’m using Kraft Avocado Mayo.
Next, just add your slaw ingredients right on top of the dressing: cabbage, bell pepper, mango, green onions, cilantro, and jalapeño. Other than bagged cabbage slaw or shredded cabbage, most of the slaw ingredients do take a little chopping. But as long as you’ve got a good knife, it goes quick! If you’ve been hanging out with me for awhile you already know I love Nakano knives, especially on my favorite chunky cutting board. Since we’re talking food prep, the other tool everyone LOVES is the Alligator Chopper. I personally don’t mind getting the groove of a good hand chop, but the alligator chopper can really speed things up for those times you need to move quick or have a lot of things to dice. Like a good chopped salad. It’s a must when I’m making pico or Greek Salsa… or when I want little, perfectly consistent roasted sweet potato cubes.
Small, uniform cubes are the cutest. Obviously.
Back to the slaw, now just toss it all together and season it with any additional salt and pepper to taste. Put it on EVERYTHING.
Gluten-Free/Dairy-Free Modifications
This recipe for spicy mango slaw is naturally gluten-free. To make it dairy-free, use your favorite plain dairy-free yogurt or sour cream.
