I LOVE fresh salsa and this pineapple radish salsa is definitely one I’ll be making again soon. The sweet tropical flavors combined with the spicy heat of radish and jalapeño make for a flavor-packed bite of salsa. This salsa is perfect for topping a delicious macro-friendly meal!

Ingredients

  • ¾ cup pineapple, diced small (150g)
  • 1 medium avocado, diced (100g)
  • 1 Persian cucumber, diced small (85g)
  • 5 radishes, diced small (80g)
  • ½ medium red onion, diced small (80g)
  • 1 small jalapeno, diced small (25g)
  • ½ cup cilantro, chopped (15g)
  • juice from a lime (15g)
  • ¼ tsp garlic powder
  • pinch of kosher salt to taste

Instructions

  • Using a knife (or an alligator chopper) dice the tomatoes, onion, cilantro, and jalapeno.
  • In a bowl, combine the diced ingredients with salt and lime juice.
  • And just like that, you have delicious pineapple radish salsa! Enjoy with tortilla chips, tacos, salads, and more!
