This Thai Carrot Slaw is the perfect side dish! It’s packed with flavor while still tasting super fresh and light! It tastes great in a taco, stuffed in a wrap, or tossed in a bowl with your favorite protein and carb for that extra zest.
This carrot slaw is really easy to make, but it does require a bit of chopping and slicing. It’s totally worth making though, especially if you like adding extra veggies and LOVE that added crunch in your favorite macro-friendly bowls. This does keep for a few days in the fridge, so feel free to make it ahead of time, or save the leftovers to use throughout the week!

Ingredients for Thai Carrot Slaw
This Thai carrot slaw is made of fresh veggies and herbs with a little bit of oil, lime juice, and vinegar. Super simple but SO good.
Here’s everything you’ll need to add to your grocery list for the perfect carrot slaw:
- Carrots
- Daikon Radish or Jicama
- Cilantro
- Fresh Mint & Basil
- Green Onions
- Lime Juice
- Rice Vinegar
- Toasted Sesame Oil
- Sambal Oelek (chili garlic paste, optional)
- Kosher Salt
- Everything Bagel Seasoning or Toasted Sesame Seeds
The chili garlic is totally optional, and I don’t always add it. I recommend adding it when you want this slaw to have just a little bit of tanginess and the tiniest hint of spice. I know some of you won’t agree with me, but I’m always TEAM GARLIC over here.

Equipment for Making Carrot Slaw
Making this Thai carrot slaw is super straightforward, but it might take you a minute to chop and dice all the veggies.
There are a few different ways to do this, but I LOVE using this Julienne peeler to get the perfect sliced veggies for the carrots and the jicama. It’s such a game-changer for texture, and I can’t believe it took me so long to grab one!
I also love using my Nakano knives (always and FOREVER) and this cute cutting board from Target is a staple for me!
How to Make Carrot Slaw
Once you have the right tools to get everything chopped up, making this beautiful slaw is so easy! Here’s how to make carrot slaw:
- Prep the veggies. Peel and cut all your veggies.
- Mix the ingredients. Add all the ingredients for the slaw into a large mixing bowl and combine well. I’m always reaching for this bowl from Walmart for all my salads and slaws. It’s so beautiful and holds just the right amount!

Yes, this Thai carrot slaw is naturally gluten-free and dairy-free. If you’re trying to eat gluten-free and/or dairy-free while counting your macros, almost all of my recipes are naturally gluten-free and dairy-free or have super simple swaps!

Main Dishes to Serve with Carrot Salad
This slaw works great paired with a grilled protein, or in a sandwich, taco, or even a wrap.
If you’re looking for specifics, this carrot salad would pair perfectly with these BBQ Soy Ginger Chicken Thighs over a bed of rice or greens. Of course, if you don’t love chicken thighs, I do have a lot of different grilled proteins to choose from on the blog depending on your preferences.

Thai Carrot Slaw
Ingredients
- 2 ½ cups carrots peeled julienne style (195g)
- 1 ½ cup daikon radish or jicama peeled julienne style (130g)
- 1 cup cilantro chopped (55g)
- 2 Tbsp fresh mint chopped (8g)
- 2 Tbsp fresh basil chopped (8g)
- ½ cup green onions chopped (22g)
- 1 Tbsp Rice vinegar 15g
- 1 Tbsp lime juice 15g
- 1 Tbsp toasted sesame oil (15g
- 1 tsp sambal oelek (chili garlic paste), optional; 5g
- ½ tsp kosher salt 3g
- 1 tsp Everything bagel seasoning or toasted sesame seeds 3g
Instructions
- Add everything to a large bowl and combine well.
- Enjoy this Thai carrot slaw with grilled protein or even as a slaw for a sandwich, taco, or wrap.

Great recipe-we substituted the lime juice w lemon and used rainbow carrots for a beautiful side dish. Will definitely make this again.
