We made this cucumber salad in the meal plan a few weeks ago, and now I don’t think I’ll ever stop making it. Thinly sliced, perfect little cukes tossed in this yummy sauce just make everything better!

This salad is simple and quick, but I wanted to post it to the blog for easy reference, in case any of you wanted to make it too!

What You’ll Need for this Sesame Cucumber Salad

The ingredients for this cucumber salad are pretty simple, and you probably have most of the stuff already!

Here’s what you’ll need…

  • Persian Cucumbers
  • Green Onions
  • Low-Sodium Soy Sauce
  • Toasted Sesame Oil
  • Sugar
  • Rice Wine Vinegar
  • Bagel Seasoning or Toasted Sesame seeds

Once you’ve gathered all the ingredients, you’re ready to go. And the steps for this macro-friendly salad are so quick.

How to Make Sesame Cucumber Salad

This Sesame Cucumber Salad makes 4 servings as written, and is so easy to make.

Start by slicing your cucumbers really thin. Then add everything to a bowl and combine well! Easy.

And although it’s definitely not required, I LOVE using my hand-held mandoline to make this cucumber salad. It makes the cucumbers the perfect thickness, and it’s so quick and easy to use. I’m not a huge kitchen gadget person, but I use this handheld mandoline all the time!

Need to make this gluten or dairy-free? This one works so well with dairy and gluten allergies!

Is this Salad Gluten-free and Dairy-Free?

Since this recipe is naturally dairy-free, it’s great if you have a dairy intolerance/allergy. But unfortunately, it isn’t gluten-free because of the soy sauce.

Luckily, it’s an easy swap. You can switch out the soy sauce with gluten-free soy sauce, tamari, or coconut aminos. The macros shouldn’t change much no matter what you choose, so just choose what you like!

We made this Sesame Cucumber Salad on my macro-friendly, dinner-only meal plan and paired it with my fav air-fried hot honey salmon bites, some jasmine rice, avocado, and a little bit of sriracha mayo. It was so good, but I haven’t written up the exact recipe for the blog yet.

Ingredients

  • 4 cups persian cucumbers sliced (450g)
  • ½ cup green onions chopped (32g)
  • 1 Tbsp. low sodium soy sauce 15g
  • 2 tsp toasted sesame oil 10g
  • 1 tsp sugar 4g
  • 2 Tbsp. rice wine vinegar 30g
  • 1 ½ Tbsp. bagel seasoning or toasted sesame seeds (15g)

Instructions
