Everyone needs a trusted side dish that is so versatile it can be used in any meal, (or several trusty side dishes.) But these SUPER simple roasted sweet potatoes are a total staple in our home. No matter the season, or the dinner plans, we use whatever seasonings we’re in the mood for and work them into dinner when we’ve got them!
What You’ll Need for Roasted Sweet Potatoes:
- Sweet potatoes (yams), diced into small cubes
- Olive oil spray
- Kosher salt
- Pepper
- Garlic powder
- Dried, crushed rosemary or favorite spices
How to Make Roasted Sweet Potatoes:
You guys know I love my Nakano knives. Especially when I’ve got my big butcher block cutting board. If you need knives, use my code: Lillie and it might save a little bit. I HAVE learned that not everyone shares my love (haha), but I find chopping a bunch of veggies to be therapeutic– love it. But that sounds miserable to you, you might love this alligator chopper to make perfect little cubes in a pinch.
First, prep your sweet potatoes. So, whichever way you choose, hand chop or alligator chopper, dice your sweet potatoes (I don’t bother peeling! We love the crispy roasted skin). If you do use the alligator chopper, you will still have to slice your sweet potatoes into coins, but then the alligator chopper will do the rest of the work cutting. You’ll have diced sweet potatoes in perfect, darling uniform cubes.
Once the sweet potatoes are diced, spread them on a large baking sheet. You can line yours with parchment if you prefer. I like to be able to easily scrape up any bits off the pan, so I actually don’t. You’ll want to make sure your sweet potatoes aren’t stacked on top of each other. They’ll roast up much more crispy if they’ve got room to breathe.
Time to Add Seasonings
Spray the cubed sweet potatoes with 7 grams of olive oil spray, or one even mist. Sprinkle LIBERALLY with kosher salt, add a few cracks of pepper, a sprinkle of garlic powder, and a good sprinkle of rosemary.
Throw your baking sheet into the oven and roast the sweet potatoes in a 400° oven for 18-20 minutes or until done to your liking. The recipe almost seems too simple to be as delicious as it is.
Serving Suggestions:
We love these roasted cubed sweet potatoes thrown into any salad or rice bowl you can dream up. I’ve even been known to throw them in crunch wraps and tacos. They’re such a yummy addition to EVERYTHING.

Ingredients
- 2 sweet potatoes (yams), diced into small cubes (582 g)
- 1/2 Tbsp Olive oil spray
- Kosher salt
- Pepper
- Garlic powder
- Dried, crushed rosemary or favorite spices
Instructions
- Spread cubed sweet potatoes (don't bother peeling!) on a large parchment-lined baking sheet.
- Spray with 7 grams olive oil spray, or one even mist.
- Sprinkle LIBERALLY with kosher salt.
- Add a few cracks of pepper, a sprinkle of garlic powder, and a good sprinkle of rosemary.
- Roast in a 400° oven for 18-20 minutes or until done to your liking.
- We love these thrown into salads and rice bowls, even crunch wraps and tacos. Such a yummy addition to everything.
