Greek Cucumber Salsa

- 2 cups Persian cucumbers diced
- 2 cups Roma tomatoes diced; remove any juicy, seedy inners
- 1 cup red onion diced
- 1 cup red bell pepper diced
- 1 Tbsp olive oil lemon-infused is even yummier!
- ¼ cup fat-free feta (or reduced fat) I've recently decided that fat-free doesn't do it for me!
- ¼ cup mint (or more)
- ½ juiced lemon (or more, I like an entire lemon usually)
Chop all your veggies nice and small with your alligator chopper or knife.
Place the chopped veggies in a mixing bowl. Top with mint, feta, lemon juice, olive oil, and salt & pepper. Stir to mix.

This will keep really well in the fridge for a few days, as long as you use Roma Tomatoes. Cherry Tomatoes get too mushy.
