This strawberry summer salad is the perfect salad to enjoy at a BBQ, potluck, or alongside your main entree this weekend. It’s bright and fresh with a ton of flavor. And it gets major bonus points for being light and healthy as well!
Strawberry Salad Ingredients
It’s super easy to whip up and looks stunning when served. To start, you just need to gather the ingredients. If you already have my weekly meal plan, you can search it there too, to add to your weekly menu and make getting the ingredients beyond easy!
The ingredients for this strawberry summer salad with strawberries are so easy, so fresh and so yummy! Here are the salad ingredients you’ll need to add to your list to make it this week.
- Butter lettuce. I know strawberry spinach salad is a fan favorite, but I love the taste and texture of butter lettuce in this recipe over the typical baby spinach! Feel free to substitute this for baby spinach if you like that best.
- Mini cucumbers. I love using mini cucumbers because they’re the perfect size for easy slicing.
- Avocado. Avocado is a must in this recipe. Dice it up small so you get some in every bite!
- Corn. I love to use fresh from the cob, but frozen works too.
- Fresh strawberries. The sweet strawberries are the star of the show in this salad, so make sure to get beautiful, fresh strawberries for this recipe.
- Green onions. When making a summer salad, it’s all about the details. Green onions add the perfect touch.
- Reduced-fat feta cheese. I like to keep fats low in this recipe by using low-fat feta cheese. If macros aren’t a big deal to you, this would be delicious with a full-fat creamy feta cheese.
- Fresh basil. I love adding fresh herbs to almost everything I make. Fresh basil takes this salad over the top.
- Fresh mint leaves. Same with the mint. Fresh herbs > anything else!
- Salt and pepper to taste. Season with your heart. It always shocks me when people don’t add salt and pepper to their salads, it makes all the difference for this strawberry salad recipe!
How to Make Strawberry Summer Salad
Making this strawberry salad is super simple!
- Prep the ingredients. Start by cutting and gathering your ingredients. If you’re going to use corn on the cob (my preferred method) you can grill it or boil it, but I like to just pop it in the microwave for ease. Alternatively, you can just thaw frozen corn if you’re in a pinch!
- Toss and serve. Add all your ingredients to a large bowl
Strawberry Salad Dressing
If you want to add a dressing to this strawberry salad, I love a sweet fruit-infused balsamic vinaigrette. Baker and Olive balsamic vinegar is my absolute favorite to toss on this salad for some instant flavor. As a shortcut dressing, I love mixing equal parts store-bought pesto with quality balsamic vinegar (like Baker and Olive).

This strawberry salad is both gluten-free and dairy-free as long as you swap the cheese for a dairy-free option.

Strawberry Summer Salad
Ingredients
- 12 oz butter lettuce 340g
- 1 cup mini cucumbers sliced thin (120g)
- ½ cup avocado chopped (100g)
- 1 ½ cups corn 250g
- 1 ½ cups strawberries sliced (250g)
- ¼ cup green onions chopped (30g)
- 2 oz reduced-fat feta 56g
- ¼ cup fresh basil chopped (15g)
- 2 Tbsp Fresh mint leaves chopped (8g)
- Salt and pepper to taste
Instructions
- Prepare all your ingredients by slicing your cucumber and strawberries, chopping the veggies, and cooking the corn.
- For the corn, microwave it in the husk for about 4-5 minutes. Then peel the husk off under cold water to cool it quickly before slicing the kernals off the cob. You’ll want to weigh/measure your corn after it’s sliced off the cob if tracking macros. Alternatively, you can grill your corn, or even just thaw frozen corn if you’re in a pinch!
- Add everything to a large bowl and serve with your favorite dressing or vinaigrette.
