The Bulk Protein Basics
I love working with a bulk protein. Cook a whole bunch of flavorful meat and then plan meals around that pre-cooked, prepped protein. It makes meal planning simple throughout the week. Freezer Meal FAQs
How far ahead should I start freezing meals?
Whenever you’ve got a little extra energy and time, honestly. A lot of people do this the week before a big life change (new baby, surgery, a move), but there’s no wrong time to build up a stash for busy weeks ahead.
Do these recipes freeze better whole or in individual portions?
Individual portions, every time. A frozen block the size of a brick takes forever to thaw and you end up eating way more than you meant to just because it’s all defrosted at once. Portion into quart bags or containers before freezing, and write the date and serving size on the outside so you’re not guessing later.
How long do these freezer meals actually last?
Two to three months is the sweet spot for taste and texture. They’re technically safe well past that since your freezer stays below freezing, but the flavor and texture start slipping the longer they sit, so try to work through your stash before the three-month mark.
Do I need to thaw these before reheating?
Thawing overnight in the fridge gives you the best texture, especially for the casseroles and bakes. If you forgot to move something to the fridge, most of the soups can go straight from freezer to pot on low heat, you’ll just need extra time and a little more stirring.
I’m stocking up before a new baby arrives, does anything change?
Not really, same recipes and same method. The only thing I’d add is to double up on the soups specifically, since those are the easiest for anyone helping you out to just heat and hand you a bowl with zero instructions needed.
