I love a meal made of things that can all be prepped ahead. It just makes it so easy to throw your meal together! It’s like a dreamy restaurant-worthy dish. But it only takes five minutes! It’s the best. These blackened fish bowls with cilantro pepita sauce fit the bill for an easy and delicious meal.
Try rounding out your blackened fish bowl with a pinch of pepitas, and optional crumbled cheese. I love dairy-free feta but it’s also delicious with cotija, goat, parmesan, or of course real feta cheese! To take it over the top, squeeze a little fresh lemon on top, and you’ve got MAGIC!

I love a deliciously healthy meal that can be mixed up and changed to make even more deliciously healthy meals. This macro-friendly spicy shrimp taco bowl is good on its own, but the salsa and dressing are oh so good with other dishes as well.
Before you get started on this recipe, know that it is going to seem like a lot of steps. But, once you make the dressing and the mango salsa, you will use it all week long! Sweet Chili Salmon
If you like salmon, you will LOVE this delicious, easy, broiled sweet chili salmon! It has just the right balance of heat, sweet, and richness. I mean, I could drink chili sauce because it turns everything to gold. And, I’ve learned that with this broiled salmon, you don’t need to use very much sweet chili sauce to get that delicious caramelized top. Which is great for your macros. Plus, nothing beats that caramelized top from the broiler… NOTHING.
