few boxes. One, it has to be quick and easy to make. Two, it must be satisfying, so I’m not immediately hungry after. And three, it’s still light enough on my macros that I can still fit in my favorite shake every night! 

Luckily, these Chipotle Egg White Toasts check all the boxes and are always a go-to for me when I’m craving a little something extra in the mornings. They’re packed with protein thanks to the egg whites, deli ham, and Greek yogurt, and keep things low in fat so you can save up your macros for other yummy treats throughout the day!

Ingredients and Substitutions

  • Egg whites: Use liquid egg whites from a carton for convenience, or separate whole eggs if preferred. You can also use whole eggs; just note the macros will change.
  • Deli ham: Turkey ham or Canadian bacon works great too.
  • Sourdough bread: Or any other type of bread you love. White, wheat, or high-protein bread all work here.
  • Greek yogurt: Creates a creamy, protein-packed base. Plain nonfat or low-fat works best.
  • Chipotle peppers: You can buy the jarred chipotle peppers already puréed in the sauce to make this easy, or blend up a can to use when needed! I love to just make a big batch of this chipotle yogurt to always have on hand..
  • Avocado: Use fresh, ripe avocado, or the mashed avocado cups to make this super simple!
  • Green onion: Adds a little crunch and pop of flavor!

Dietary Adaptations 

Gluten-free: Use gluten-free bread.

Dairy-free: Swap the Greek yogurt for dairy-free yogurt or sour cream.

How To Make

The full printable recipe is below, but let me walk you through the process so you know what to expect when you’re making it!

1. Heat a nonstick skillet over high heat. Add a spritz of oil. Pour liquid egg whites into the pan and let them cook in a thin layer for a minute. Season with a little salt and pepper. Fold the egg whites over onto themselves to make some room.

2. Add another spritz of oil to the open half of the pan and wait a few seconds to make sure it’s very hot. Add your ham to the pan to heat it up for about a minute.

3. Stir together your Greek yogurt and chipotle peppers in adobo sauce. (You can buy the jarred chipotle peppers already puréed in the sauce to make this easy, or blend up a can to use when needed! Or make a larger batch of this chipotle yogurt.)

4. Toast your bread and top with chipotle yogurt

5. Then add the smashed avocado, ham, and a layer of fried egg whites.

6. Finish with some chopped green onions. Add additional salt and pepper to taste.
