- 1/2 cup liquid egg whites 120g
- Pinch of salt and pepper
- 2 oz. deli ham 56g
- 2 slices sourdough bread 56g
- 2 Tbsp. nonfat Greek yogurt 30g
- 1 tsp chipotle peppers in adobo sauce 7g
- 1/4 cup avocado 40g
- 2 tsp green onions chopped
Heat a nonstick skillet over high heat. Add a spritz of oil. Pour liquid egg whites into the pan and let them cook in a thin layer for a minute. Season with a little salt and pepper. Fold the egg whites over onto themselves to make some room.
Add another spritz of oil to the open half of the pan and wait a few seconds to make sure it’s very hot. Add your ham to the pan to heat it up for about a minute.
Stir together your Greek yogurt and chipotle peppers in adobo sauce. (You can buy the jarred chipotle peppers already puréed in the sauce to make this easy, or blend up a can to use when needed! Or make a larger batch of this chipotle yogurt.)
Toast your bread and top with chipotle yogurt, smashed avocado, ham, and a layer of fried egg whites. Finish with some chopped green onion. Add additional salt and pepper to taste.
