These Tomato Basil Egg White Toasts are my go-to when I want something that feels a little fancy but still fits my macros. They’re light yet filling, packed with protein, and layered with fresh, savory flavors that make breakfast (or lunch) feel exciting again.

This is the kind of recipe that proves macro-friendly meals don’t have to be boring. By using egg whites, deli ham, and Greek yogurt, you get tons of protein without a lot of extra fat, while still keeping everything flavorful and balanced.

Ingredients and Substitutions
- Egg whites: Use liquid egg whites from a carton for convenience, or separate whole eggs if preferred. You can also use whole eggs; just note the macros will change.
- Deli ham: Turkey ham or Canadian bacon work great too.
- Sourdough bread: Or any other type of bread you love. White, wheat, or high-protein bread all work here.
- Greek yogurt: Creates a creamy, protein-packed base. Plain nonfat or low-fat works best.
- Garlic powder: Helps add a little extra flavor to this toast!
- Basil paste: Or about 1 tablespoon finely minced fresh basil.
- Heirloom tomato: I just love a good heirloom tomato, but regular tomatoes or cherry tomatoes also work.
- Arugula: Adds a fresh, peppery bite. Spinach is a great swap.
- Red pepper flakes: Optional, but highly recommended for a little heat.
Dietary Adaptations
Gluten-free: Use gluten-free bread.
Dairy-free: Swap the Greek yogurt for dairy-free yogurt or sour cream.
How To Make
The full printable recipe is below, but let me walk you through the process so you know what to expect when you’re making it!

1. Heat a nonstick skillet over high heat. Add a spritz of oil. Pour liquid egg whites into the pan and let them cook in a thin layer for a minute. Season with a little salt and pepper. Fold the egg whites over onto themselves to make some room.

2. Add another spritz of oil to the open half of the pan and wait a few seconds to make sure it’s very hot. Add your ham to the pan to heat it up for about a minute.

3. Stir together your Greek yogurt, garlic, and basil paste.

4. Toast your bread and spread the basil yogurt in a thin layer.

5. Then add the ham and a layer of fried egg whites.

6. Finish with some sliced tomato and a pinch of arugula. Add additional good salt, pepper, and/or a little red pepper flakes to taste.

- Use high heat: Cooking the egg whites quickly helps them stay fluffy instead of rubbery.
- Season every layer: Adding a little extra salt on the tomatoes and egg whites goes a long way in boosting flavor.
- Slice your own bread: Buying unsliced bread lets you control how thick (or thin) each slice is, so you can easily adjust portion size and macros to fit your goals. Thinner slices for lighter days, thicker ones when you want something more filling.
