A WHOLE cup of fluffy egg whites, two turkey sausage links, baked potato, roasted bell peppers, and smashed avocado… and yes, that’s all ONE serving! My sausage egg and potato breakfast bowls pack 38 grams of protein into one big, cozy bowl for 367 calories.

The potato and peppers bake on the same sheet pan while you scramble the whites and brown the sausage in one skillet. Got leftover baked potatoes? (We often do!) Then you skip the oven completely and breakfast is ready in the time it takes to air fry a few peppers.

If you’re building out your meal prep breakfasts, this one sits nicely next to my sweet potato breakfast bowl and egg white cups.

A Quick Look At The Recipe

  • Recipe Name: Potato, Sausage, and Egg White Bowls

  • Serves: 1 bowl
  • Calories: 367 cal

  • Why You'll Love It: A high-protein breakfast bowl with fluffy egg whites, turkey sausage, baked potato, roasted bell peppers, and smashed avocado. 38 grams of protein and 367 calories per bowl, and easy to meal prep for the week!

How This Bowl Hits 38 Grams of Protein

It’s all about the egg whites. A full cup (240g) of liquid egg whites scrambles up into a HUGE fluffy pile, so the bowl looks and eats like a lot of food, with very little fat. The turkey sausage links add more protein plus all the savory flavor.

Then the half baked potato brings 27 grams of carbs to the party, and the avocado adds healthy fat. The whole bowl lands at 10 grams of fat and 4.6 grams of fiber, and it’s gluten-free and dairy-free.

Before You Start Cooking

  • Check for leftover potatoes. Already baked a few for dinner, like for my broccoli cheese baked potatoes? Use one of those and just air fry the bell pepper for 5 to 10 minutes at 400.
  • Use a rimmed pan and parchment. The potato halves go face down on the parchment and the peppers share the same pan, so it’s one pan to wash.
  • Grab a nonstick skillet. Egg whites love to stick. A nonstick pan plus a mist of oil spray keeps them fluffy and in one piece.
  • Weigh as you build. The macros are for 100g potato, 240g whites, 30g cooked peppers, and 30g avocado. If your portions change, set it up as a recipe in MyFitnessPal so your numbers stay right.

Important Ingredients and Substitutions

  • Liquid egg whites: 1 cup (240g) per bowl. The carton kind makes this so easy, no cracking or separating.
  • Jimmy Dean turkey sausage links: I use 2 per bowl, chopped. Another turkey or chicken sausage link works, just update your macros.
  • Russet potato: Half a medium baked russet (100g). A baked sweet potato works too and crisps up nicely in the air fryer.
  • Avocado: ¼ cup smashed (30g). Add it fresh right before eating.
  • Sauce: Drizzle with any sauce you have and love! We love homemade green sauces, chipotle cream, tzatziki, or sriracha. Sauce isn’t included in the macros, so track whatever you add.

How to Make Potato, Sausage, and Egg White Bowls

  1. Prep the potato. Preheat the oven to 400 and line a rimmed baking sheet with parchment. Scrub and dry the potato, cut it in half, mist with olive oil, and sprinkle with kosher salt.
  2. Bake the potato and peppers. Place the halves face down, poke the skin a few times with a fork, and add the chopped peppers to the same pan. Bake for 25 to 30 minutes, until the potato is very tender.
  3. Scramble the whites. Heat a nonstick skillet over medium-high with a mist of oil. Add the egg whites, salt, and pepper, and let them cook for a minute before you stir and scramble.
  4. Brown the sausage. Push the whites to one side, add the chopped sausage, and cook until the eggs are set and the sausage is browned.
  5. Build the bowl. Chop the potato and add 100g to a bowl with the whites, 2 sausage links, 3 Tbsp (30g) cooked peppers, and ¼ cup (30g) avocado. Drizzle with your favorite sauce.

Is Eggs, Sausage, and Potatoes a Healthy Breakfast?

It can be, and this version is built for it. Using egg whites instead of whole eggs and turkey sausage links keeps the fat low while the protein stays high: 367 calories, 38 grams of protein, 27 grams of carbs, 10 grams of fat, and 4.6 grams of fiber per bowl.

You still get real potatoes and avocado, so it tastes like a diner breakfast plate. Just keep an eye on the sauce if you’re counting.

Can You Meal Prep These Breakfast Bowls?

YES, and it’s one of my favorite ways to make them. Build each bowl in a lidded container and leave the avocado off so you can add it fresh.

  • Reheat the easy way: Microwave the whole bowl.
  • Reheat the better way: Microwave just the egg whites while you throw the potatoes, sausage, and peppers in the air fryer for a yummier texture.
  • Fridge: Keep prepped bowls in the fridge for up to 3 to 4 days.

Ways to Switch It Up

Potato Breakfast Bowl FAQs

Can I use whole eggs instead of egg whites?

You can, but the calories and fat will go up and the protein numbers will change. Re-track it if you swap.

Can I cook the peppers without the oven?

Yes! If you’re using leftover baked potatoes, toss the chopped bell pepper in the air fryer for 5 to 10 minutes at 400.

Are these bowls gluten-free and dairy-free?

Yes, as written they’re both. Double-check the label on your sausage and sauce to be sure.

How many bowls does this recipe make?

One. Multiply everything by the number of mornings you’re prepping for and bake all the potatoes on one big pan.

If you make these, I’d love a star rating on the recipe card below, it really helps other readers find the recipe. And come hang out with me on Instagram, where I share what we’re eating all week.

Potato, Sausage, and Egg White Bowls

A high-protein breakfast bowl with fluffy egg whites, turkey sausage, baked potato, roasted bell peppers, and smashed avocado. 38 grams of protein and 367 calories per bowl, and easy to meal prep for the week!
Prep Time 10 minutes
Cook Time 35 minutes
Total Time 45 minutes
Servings 1 bowl
Calories 367 kcal

Ingredients

  • 1/2 medium russet potato baked (100g)
  • 1/4 cup bell pepper chopped (45g)
  • 1 cup liquid egg whites 240g
  • 2 Jimmy Dean turkey sausage links chopped
  • 1/4 cup avocado smashed (30g)

Instructions

  • Preheat the oven to 400F. Line a rimmed baking sheet with parchment paper. Wash, scrub, then dry the potato. Cut it in half, then spray with a light mist of olive oil and sprinkle with kosher salt.
  • Place the halves face down on the parchment and poke the skin several times with a fork. Add the chopped peppers to the same pan and bake for about 25-30 minutes (depending on the size of your potatoes, of course). When they’re done, they’ll be very tender when you poke them. (If using leftover baked potatoes, and we often are, just throw your bell pepper in the air fryer for 5-10 minutes at 400F.)
  • Heat a nonstick skillet over medium-high heat. Add a mist of oil spray. Add the liquid egg whites, salt, and pepper. Let them cook for a minute before stirring and scrambling.
  • Push the whites to one side and add the chopped sausage. Cook until the eggs are set and the sausage is browned. Add more salt and pepper to taste.
  • Chop the baked potato and add it to the bowl. If using pre-baked potatoes, I love to chop, spray, season with salt and pepper, and air fry or even pan fry for 5 minutes or so to crisp them up a bit.
  • Build each bowl with about ½ a baked potato, chopped (100g), 1 cup of scrambled whites (240g), 2 sausage links, 3 Tbsp cooked peppers (30g), and ¼ cup avocado (30g). Drizzle with any sauce you have and love! We love homemade green sauces, chipotle cream, tzatziki, or sriracha!

Notes

GF/DF: Yes!
PREP: If prepping these for the week, build each bowl in a lidded container, leaving the avocado off to add fresh. When ready to eat, you can microwave the whole bowl, OR add the whites to a bowl to microwave while throwing the potatoes, sausage, and bell pepper in the air fryer for a yummier texture!
