This Avocado Caesar Dressing was originally written for my Kale Caesar Salad, but is delicious on any salads, bowls, or grilled meats!

Ingredients and Substitutions
- Avocado: Make sure your avocado is ripe so that is blends with the dressing well.
- Lowfat Greek yogurt: Gives this dressing a creamy base (and a boost of protein) without extra fat.
- Lite mayo: Helps to give a hint of traditional Caesar flavor while keeping the overall dressing lighter. You can also substitute more Greek yogurt if preferred.
- Lemon juice: I ALWAYS recommend fresh lemon juice to bring freshness and balance to this dressing.
- Dijon mustard: The dijon mustard acts as a natural emulsifier, creating that smooth, creamy texture that you would normally get from using traditional raw egg.
Dietary Adaptations
GF/DF: For dairy free, I love using Forager plant based sour cream in place of the yogurt.

How To Make
- Blend everything until smooth. Store in the fridge for the week to use on salads and bowls! Or just toss a nice big family style salad.

Ingredients

- 2 Tbsp. lite mayo 30g
- 1/4 cup low fat Greek yogurt 60g
- 3 Tbsp. lemon juice 45g
- 2 tsp. dijon mustard 10g
- 1/2 tsp kosher salt
- 3/4 cup water 180g
