About This Recipe

I’ve been on a kick with zucchini oats. They’re such a yummy, non-salad way to pack in your protein and veggies! I’ve loved every flavor I’ve tried so far, but chocolate is always going to win for me.

Ingredients and Substitutions

  • Zucchini: Finely grated or riced in a food processor.
  • Old-fashioned oats: Rolled oats or old-fashioned oats are my preference for these baked oats. I love how hearty they are and make this more of a dense cake. You could also use quick oats but they will have a little lighter, fluffier, more cake-like texture. I do not recommend using steel-cut oats.
  • Protein powder: Use your favorite chocolate protein powder.  I’m LOVING the brownie batter by Clean Simple Eats (Use Lillie for 10% off) or the chocolate protein powder by Active Stacks (Use Lillie for 10% off).
  • Cocoa powder: I love to use jet black cocoa powder (use code Lillie10 for 10% off) to give these oats that really rich, dark chocolatey flavor but you can use any cocoa powder you love!
  • Creamer: I love the Califia Farms almond milk creamer or you can just sub your favorite milk.
  • Chocolate chips: I love to use the mini chocolate chips so you get little pools of chocolate in every bite but regular chocolate chips also work.
  • Stevia: Liquid vanilla stevia or monkfruit. I prefer the liquid version as I think it blends best but any sweetener of choice works!

Dietary Adaptations

  • Gluten-free: Trader Joe’s or Bob’s Red Mill both have great gluten-free oat options. I use them interchangablely.
  • Dairy-free: My go-to dairy-free protein powder is Active Stacks (use code LILLE for 10% off). Their vanilla is great also, but their chocolate superb. You don’t have to use either of these brands, they are just my personal favorites. Feel free to experiment with whatever you’ve got!
  • I also mentioned Califia Farms almond milk creamer. I have experimented with all sorts of dairy-free creamers and this happens to be my favorite. You are only using 1 tbsp so feel free to just use your favorite milk or nut milk, the macros will hardly change.

How to Make

  1. Let’s talk zucchini for a minute. For this recipe, you can either “rice” your zucchini, finely grate it, or process it until pretty smooth. My favorite way of prepping zucchini for recipes like this, and my dairy-free lemon blueberry baked zucchini oats, is using my food processor. I love the 8 cup food processor from Cuisinart, but for this recipe, you only need a ½ cup of prepared zucchini so you could totally get away with using Cuisinart’s mini processor, or simply grating it finely. I love using the mini food processor for smaller recipes like this. 
  2. Once you’ve prepped your zucchini, you’ll mix it with old-fashioned oats, chocolate protein powder, dark cocoa powder, Califia Farms almond milk creamer, mini chocolate chips, a pinch of salt, and stevia to taste. 
  3. I like mixing everything in a large cereal bowl before microwaving for about 2 minutes. After the first round of cooking, give it a good stir and microwave for another 1-2 minutes. Top with your favorite toppings and enjoy!

Serving Suggestions

I love my microwave brownie zucchini oats drizzled with a little more cashew milk. Then I top it with some dairy-free whipped cream, some berries or bananas, and of course a little nut butter. But I can promise you, a scoop of ice cream on top for dessert will not disappoint! It doesn’t taste like a brownie alone. I don’t want to bait and switch anyone! But I’m telling you, once you’ve got a few yummy toppings on it, it transforms! And you’ll almost think you’re digging into a decadent treat.

Ingredients

  • 1/2 cup zucchini “riced”, finely grated, or processed until pretty smooth 100g
  • 1/3 cup old fashioned oats 30g
  • 1/2 scoop chocolate protein powder 15g
  • 1 tsp. dark cocoa powder 5g
  • 1 Tbsp. Califia Farms almond milk creamer 15g
  • 1 tsp. mini chocolate chips 5g
  • Pinch of salt
  • Stevia to taste

Instructions

  • Mix everything in a large cereal bowl and microwave for about 2 minutes. Give it a good stir and microwave for another 1-2 minutes. Top with your favorite toppings and enjoy!

Notes

Protein: This is delicious with the brownie batter protein by CSE (whey), or the chocolate by Active Stacks (beef, which means non-dairy.) Feel free to experiment with whatever you’ve got! Use code LILLIE for 10% off both brands.

  1. Am I supposed to use the water that is called for in the oatmeal? This turned out so dry and thick it was inedible for me. Maybe I had a really dry zucchini or I’m just an old school oatmeal gal.

    I don’t like microwave food BUT do not pass this recipe! It tastes like a brownie in under a few minutes. Definitely more chocolatey than the baked oats. I had for breakfast but will be making this for a nice afternoon treat! I used thrive market bone broth protein powder and it worked great.

    I love that this delicious recipe can be made as a single serving! When I make the larger version, I just want to eat it all and have no control! I added cacao nibs and almond butter to the top of mine after microwaving.
