#1 Almost Classic Cottage Cheese Chicken Salad

Chicken salad is a summer staple and a total classic. And for good reason, because not only is it refreshing but if you use rotisserie chicken, then this meal requires absolutely zero cooking. Just chopping, mixing, and stirring. 🙌 Plus, you can store it in the fridge for a few days to make one meal prep stretch for a few days. 

This Almost Classic Cottage Cheese Chicken Salad is the perfect no-cook summer meal that you can eat with bread, on crackers, on a bed of greens, or just straight out of the bowl with a spoon. I don’t judge.

#2  Shrimp Ceviche Salad

I know that shrimp can be polarizing, but it’s SO good especially when counting macros. For 100 grams of cooked shrimp, it’s 100 calories with 24 g of protein and less than 1 gram of fat, which makes it really easy to fit into your daily macros. 

And if macros don’t really matter to you, shrimp is also a good source of omega-3 and antioxidants. 👍

To make this a macro-friendly no-cook summer meal, simply start with already-cooked shrimp. This Shrimp Ceviche Salad is inspired by flavors of ceviche, but unlike traditional ceviche, it doesn’t start with raw fish. 

This one is so much easier to make with this alligator chopper. A total game-changer for chopped salads, picos, salsas, etc.

#3 Grinder Salad

I LOVE a big salad, and this one checks all the boxes. It’s quick to make, full of protein and topped with all the goods.

Grinder salads went kind-of viral a few years ago, and it makes sense because they’re SO good and easy. And I knew I wanted to create my own macro-friendly version. 

This one is great to make in the summer because you can chop almost all the ingredients in your alligator chopper, and then have one big bowl you can enjoy. 

That way when your kids are eating dino nuggets this summer, you can still have something that’s big, healthy, full of veggies, and filling while still hitting your fitness goals.

#4 Cottage Cheese & Yogurt Bowl

This one is typically more of a breakfast food–but I’m not a huge breakfast person. 👀 But if you are, you can’t go wrong with this bowl in the morning! It’s the perfect no-cook summer meal, and I LOVE it as a late-afternoon snack. Kind of like an açai bowl but not. ha. So yummy and refreshing on those hot summer days. 

And if you’re not a huge cottage cheese fan, that’s okay…you can blend up the cottage cheese and you won’t have those little curds that so many people hate but I LOVE! Give me all the curds. Especially Knudsen brand. It’s everything to me.

Honestly, it couldn’t be easier. With some chopping, you’ll make quick work of this salad, and it will be PACKED with flavor. I’m all about flavorful, healthy food. 👍

My family loves this one, and I love to keep it in the fridge for lunch or snacking throughout the day. 

You can eat it with your favorite bread, chips, crackers, or piled high on a bed of greens. No matter how you eat it, you’ll love having this in the fridge to grab when you’re in a hurry!
