The best part about macro-counting is you can eat at whatever time works best for you. Breakfast for dinner? Perfect. Giant chocolate shake after 9 pm? Even better (iykyk). And while I’ve never been much of a breakfast person, I still LOVE to eat breakfast foods–just not usually in the morning. If you feel the same way (or just like to sleep in on the weekends), here are my 4 macro-friendly brunch ideas.

Creamy Cilantro Breakfast Taquitos 

If you’re a savory breakfast person, then these healthy breakfast taquitos are a great go-to. They’re pretty quick to make and will easily fit into your daily macros (that way you can add even more toppings if you want to). Snickerdoodle Zucchini Baked Oats

These extra-light oatmeal squares are perfect to make ahead for a healthy brunch, dessert, or late afternoon snack. Now don’t be fooled, this isn’t cake or a brownie. They’re more like oatmeal squares or bread pudding. It’s also bulked up with a little zucchini, that way you can have a satisfying portion without using up all your carbs in one meal. 

I love these baked oats and have made several different variations that you can now love too…you can find them all here.  And want to know the best part? They’re all so light that you can top them with whatever you love–whipped cream, chocolate chips, or even ice cream. No judgment here! 

Egg White Veggie Breakfast Bake

This Egg White Veggie Breakfast Bake is super easy to make and so light. You can even eat half the pan and still feel great afterward. This breakfast bake was inspired by this delicious casserole from Our Best Bites that my entire family loves. 

My version is a little bit lighter and macro-friendly but still packed with flavor. You can make this bake ahead of time and store it in the fridge overnight to bake the next morning, or you can bake it instantly. Either way, you won’t regret it.

And if you like breakfast bakes, you might also really enjoy my Garden Veggie Quiche. It’s so filling, but light enough that you can eat the entire thing by yourself. And while most people might like this quiche for breakfast, it does take 45 minutes to bake, so I usually eat it for lunch. Enjoy! 

Quick and Easy Breakfast Nachos

When you first start counting macros, you might worry that you’ll have to give up all your favorite foods…but it’s all about balance. And while I love to eat yummy desserts like these giant cinnamon rolls, I also know that indulging too often doesn’t always make me feel the best. 

So while it’s okay to have a big plate of nachos if you want to, I usually prefer to make my favorite foods with a few healthy swaps, so I can enjoy them every day while still feeling good. 

That’s why I love these breakfast nachos. They’re macro-friendly and made with my favorite Cut Da Carb wraps. I use these wraps to make the chips, and they’re so yummy. For the nachos, I use eggs to act kind of like the meat of traditional nachos and then top it off with all my favorites like cilantro, red onion, sour cream, etc.–so good. 

And to make cutting up all the toppings for these nachos a little bit easier, I love using my alligator chopper. I’m not usually a gadget person and most of the time just prefer a really good knife and a cutting board, but this chopper makes the perfect little squares for pico, salads, roasted potatoes, and more. I might not be able to be perfect, but at least my veggies can be.
