Tomato Basil Egg White Toasts

These Tomato Basil Egg White Toasts are my go-to when I want something that feels a little fancy but still fits my macros. They’re light yet filling, packed with protein, and layered with fresh, savory flavors that make breakfast (or lunch) feel exciting again.

Ingredients

  • 1/2 cup liquid egg whites 120g
  • Pinch of salt and pepper
  • 2 oz deli ham 56g
  • 2 slices sourdough bread 56g
  • 2 Tbsp. nonfat Greek yogurt 30g
  • 1/4 tsp. garlic powder
  • 1 tsp. basil paste 5g, or 1 tbsp minced basil
  • 1/3 cup heirloom tomato 85g, sliced
  • 1/2 cup arugula 10g
  • 1/8 tsp. red pepper flakes

Instructions

  • Heat a nonstick skillet over high heat. Add a spritz of oil. Pour liquid egg whites into the pan and let them cook in a thin layer for a minute. Season with a little salt and pepper. Fold the egg whites over onto themselves to make some room.
  • Add another spritz of oil to the open half of the pan and wait a few seconds to make sure it’s very hot. Add your ham to the pan to heat it up for about a minute.
  • Stir together your Greek yogurt, garlic, and basil paste.
  • Toast your bread and top with basil yogurt, ham, and a layer of fried egg whites. Finish with some sliced tomato and a pinch of arugula. Add additional good salt, pepper, and/or a little red pepper flakes to taste.
