I like squash…and I cannot lie. If you make any of my recipes, you’ll find that I use all kinds of squash. Butternut, Acorn, Delicata, Spaghetti…it’s all just so GOOD! It’s perfect for bulking up any meal without adding tons of extra calories, which is essential when you’re counting macros or keeping things light. People always ask me how to cook it, and there’s nothing quicker than microwaving it. I usually opt to microwave it if I’m using it in something else with a lot of added flavor mixed in. So here’s a quick rundown of how I like to microwave spaghetti squash.

When to Microwave vs. Roast Your Spaghetti Squash 

As a small caveat, I know a lot of people like to cook their spaghetti squash in the instant pot or roast it, and that’s fine too. I actually do roast it when I have more time, or I really want it to be extra flavorful. 

Especially if you are going to eat the spaghetti squash on its own, I would recommend roasting it. It does have more flavor that way. I actually have a simple roasted spaghetti squash recipe on my blog here, if you need it. 

But since I’m usually short on time and adding it to casseroles or skillets, microwaving it has been my go-to because it’s so quick and easy. And we all know that when you’re feeding your entire family, fast recipes are a lifesaver. 

Steps on How I Microwave Spaghetti Squash

The one thing you need to know before microwaving your spaghetti squash is that it can explode, so you’ll want to make sure you give it a lot of ventilation. And if you hear sizzling coming from the microwave, check on it ASAP. 

With that warning in mind, here are the simple steps on how to microwave your spaghetti squash: 

Start by simply poking the squash several times with a knife. Then, microwave it for about 7 minutes. After 7 minutes, rotate it and microwave it for 4-7 minutes longer (depending on the size of your spaghetti squash). As a quick note, if you have a really small squash, make sure to reduce the minutes accordingly. We’d rather have an underdone squash than an overdone mushy one!

Once the squash is tender to the touch, it’s ready to take out. Just be careful because it can get really hot. Cut it in half immediately on the short axis, so it’ll stop steaming on the inside. Then, scoop out the seeds and let it cool.

Like I said earlier, I don’t really like microwaved spaghetti squash plain. If I’m just going to eat it as a side, I much prefer to roast it on my favorite large sheet pans. But if I’m throwing it in a casserole or covering it in marinara, then I love to microwave it.

    Question: I want to substitute spaghetti squash (or anything you suggest) for my husband and myself because duh, but he is really snobby about his pasta, as well as always having to have pasta. Is it a good sub? Is it better microwaved to sub as simple pasta? He will have a bolognese with it but he is very stuck up. Ok, he’s litte b**ch about it.

    1. Hi! I love spaghetti squash as a simple veggie base for pasta sauces. But… If it’s not something you’ve used like that before it’s definitely not going to trick you. I mean, it really just feels and taste like a simple, mild vegetable. It’s not starchy or chewy or anything like that, it’s just a great when you’re trying to keep carbs lower! But you might want to manage his expectations Haha.
