Trader Joe’s Lentil Dip

I couldn’t decide whether to call this a Lentil Dip? Or Lentil Salad. It’s both— so call this Trader Joe’s Lentil Dip what you like! Depending on whether you eat it with a fork or a chip. But it’s the EASIEST tastiest little combo, and the best thing to bring to a party or put out on an appetizer board.

The first time I had it was years ago, when my sister brought a bowl of it to a family party, after sampling the combo at Trader Joe’s! So we didn’t make this one up– but we do like to gobble it up. Ha. But of course I had to make a few small changes to make the macros as tight as could be.

Making the Lentil Dip Extra Macro-Friendly

First, we added cucumber to stretch the volume without adding many macros at all. Using fat-free feta from Trader’s Joe’s makes this dip especially macro-friendly since it adds essentially JUST protein! But a reduced-fat version works great too… and if you’ve got plenty of room for fats, obviously any feta will be delicious. I love to use the package of pre-cooked lentils and pre-made bruschetta from Trader Joe’s, because EASE is the name of this game. But feel free to cook your own lentils according to package directions. And use any store-bought bruschetta, or make your own! This one has been calculated using the JAR from Trader Joe’s.

If you want to make this lentil dip more of a meal, it’s also delicious served on top of a bed of greens with fish or chicken… or tossed into any massive salad or pasta. But our favorite way to serve it is next to a pile of pita chips in a room full of good company.

How to Make Your Lentil Dip

The prep is pretty minimal for this salad. Simply pull all the ingredients out of the fridge, dice your cucumber and chop your basil, and throw it all in a bowl. It’s that simple. Serve with pita chips, crackers, or over a bed of greens with chicken or fish. Enjoy!
