Ok hear me out. Ground turkey is already lean– YES. But sometimes we just want MORE food. Like more food for free. Or almost free. And even though we like protein, I’m always gonna vote for MORE food that won’t even cost me my protein! Enter this mushroom turkey taco meat.

It’s just like it sounds, but that won’t stop me from describing it. Ha. It’s my blog. Ground turkey, cooked up with lots of sneaky little ninja mushroom bits. This helps to bulk up a portion without bulking up the macros– so we can STUFF OUR TORTILLAS to the rim, while keeping things light. Plus, obviously more veggies makes us all feel like champs, so you’re welcome.

I know mushrooms can be a polarizing veggie, but I MIGHT dare say that even the mushroom-haters will be into this one–especially a mushroom-hater who loves large portions, small macros, and the super-hero-ness that comes from knowing you’re eating tons of veggies.

How to Make Your Mushroom Turkey Taco Meat

To start, sauté your onion for 3-5 minutes until it’s nice and soft. While your onion is cooking, pulse your mushrooms in a food processor until all of it is in nice bite sized pieces. Add the mushrooms to your onions with 1 tsp of the kosher salt and sauté for another 5-10 minutes. Be sure your mixture is soft, and cooked long enough so it’s not too wet. 

Add your minced garlic, ground turkey, and the rest of your ingredients to the pan. Crumble the meat and mix everything together. Cook until ground turkey is nicely browned and cooked through. You’re done! So easy. 

This recipe is perfect for corn tortilla topped with all of your favorite taco fillings, piled on nachos, in rice bowls… taco salads. YOU GET IT.

What You’ll Need for Your Mushroom Turkey Taco Meat

  • ½ white onion
  • 16 oz mushrooms 
  • 2.5 tsp kosher salt
  • 5 cloves of garlic (you know I only use frozen cubes… so EASY)
  • 1.5 lb 93/7 ground turkey (I used organic Fulton Farms from Costco that only has 4.5 fat/4oz)
  • 3 tsp cumin
  • 2.5 tsp chili powder
  • 2 tsp oregano
  • 2 tbsp tomato paste
  • ¼-½ cup water

Mushroom Turkey Taco Meat

All the comfort and ease of tasty taco meat, packed with sneaky veggies to make it extra light! A win.

Ingredients

  • ½ white onion 140g
  • 16 oz mushrooms pulsed in food processor to small pieces
  • 2.5 tsp kosher salt divided
  • 5 cloves of garlic minced (or frozen cubes)
  • 1.5 lb 93/7 ground turkey* 672 g
  • 3 tsp cumin
  • 2.5 tsp chili powder
  • 2 tsp oregano
  • 2 tbsp tomato paste
  • ¼-1/2 cup water depending on how dry

Instructions

  • Cook onions over high heat until soft, for about 3-5 minutes. Add processed mushrooms and 1 tsp of kosher salt, sauté for another 5-10 minutes until it’s cooked down, soft, and not too wet.
  • Add garlic, ground turkey, additional 1.5 tsp kosher salt and the remainder of the ingredients. Crumble and cook until everything is mixed together and meat is browned and cooked through.
  • Serve in tortillas with Jalapeno Avocado Dressing and all of your favorite taco fillings!

Notes

  • This is just one more way to bulk up your food. The addition of the mushrooms makes your portion of “meat” feel hearty while keeping it overall lighter in calories.  If your main goal is to increase protein, you might not need any mushrooms! But if you like to get extra veggies in your diet, and think freeing up calories for later is always a good thing, this is for you.
  • *I used 93/7 ground turkey, but this Fulton Farms Organic only has 4.5 fat per 4 oz. If yours has a little more, don’t stress! Just estimate (probably) an extra 1-3 grams of fat for your portion.
