Easy Buffalo Chicken Grain Salad

Here’s another recipe with one of my favorites– creamy buffalo chicken. I can’t stop building meals out of this stuff– because it makes EVERYTHING amazing. This easy buffalo chicken grain salad is no exception.

Since my creamy buffalo chicken recipe will make much more than you need for this salad, use it in tacos, wraps, bowls, and crunchwraps all week. You’re welcome. THEN— feel free to freeze the rest for later. I just freeze in a large ziplock and pull out when we need it back in our lives!

How to Make Your Easy Buffalo Chicken Grain Salad

Give your mixed greens a quick toss and then put them at the bottom of your bowl. Next, add your cabbage and mix in 1 tablespoon of the dressing. My favorite dressings to pair with this is either the Jalapeno Avocado Dressing or Cilantro Lime Ranch. 

Before you start layering, you can do a little prep by cooking your brown rice, halving your cherry tomatoes, and chopping your avocado and celery. 

Now it’s time to add in all the goodness. Place your cooked brown rice, creamy buffalo chicken, blue cheese and all the veggies on top. Don’t forget your pickled onions! These are super quick to make and super worth it. 

Drizzle the rest of your dressing and top it off with a pinch of fresh cilantro and a splash of Frank’s RedHot Sauce. Enjoy!

This is the perfect lunch to spice up your day. It makes it a little more exciting than a house or caesar salad and gives you the kick to keep moving. Treat yourself to this creamy buffalo chicken grain salad.

Ingredients

  • 1.5 cups shredded cabbage 85 g
  • 1 cup of loosely packed mixed greens chopped (65 g)
  • ½ cup cooked brown rice 68 g
  • cup creamy buffalo chicken 100 g
  • ¼ cup cherry tomatoes halved (40 g)
  • 1 ½ tsp crumbled reduced fat blue cheese 10 g
  • ¼ cup celery chopped 20 g
  • ¼ of a small avocado chopped (25 g)
  • Pinch of quick pickled onion 15 g
  • 2 Tbsp divided Jalapeno Avocado Dressing or Cilantro Lime Ranch
  • Drizzle of Frank’s RedHot Sauce
  • Fresh cilantro

Instructions

  • Give your greens a quick chop and add to the bottom of a large bowl. Add cabbage and toss with ONE Tbsp of the dressing.
  • Top greens and cabbage with rice, warmed buffalo chicken, cherry tomatoes, blue cheese, celery, and chopped avocado. Drizzle with remaining 1 Tbsp of dressing and finish with a little extra hot sauce. Top with fresh cilantro and enjoy!
