Counting macros in the summer is HARD. There’s so much fun, activities, and delicious food and snacks! And while balance is crucial, I LOVE noshing all day long without feeling sick afterward. IYKYK. That’s why I love having easy, one-dish meals on hand that won’t entirely wreck my kitchen and that will make dinner feel totally feasible, even if we’re not on our usual routine. So I did a quick round-up of 6 of my favorite macro-friendly summer one-dish meals for you and your family to enjoy!

#1 Quick and Easy Pickle Chicken Salad

This is a FAN favorite and for good reason. It’s simple to make, and then you can keep it in the fridge for 3-4 days for lunch or snacks all week. It’s perfect for summer because it requires no cooking 🙌 as long as you use rotisserie chicken! My family loves it so much that we usually do a double batch.
To make it easier, I love buying the big bags of rotisserie chicken from Costco, and then seasoning them up really quick in a hot skillet. So if you love pickles and mustard, you can get all the details here!
#2 Fresh and Healthy Taco Salad

This one is so easy to throw together and the perfect use of any leftover taco meat that you have on hand. If you need a recipe, you can get my FAV taco meat recipe here. But seriously, this is so good and fresh that you won’t even miss the tortilla…at least I don’t!
This recipe just makes one serving, so make sure to double it, or triple it, if you’re serving it for your family! The portions are BIG, but that doesn’t mean you want to share…

#3 Sweet Potato Chipotle Rotisserie Chicken Skillet

Okay, if cooking on the stove isn’t your thing in the summer, I get it. But this chicken skillet is SO good that I couldn’t NOT add it. I mean…sweet potatoes can do no wrong IMO. I don’t think that needs explaining.
This does take about 40 minutes to make, but it’s all made in one pan and it’s HUGE! With 8 servings, you can definitely eat it for lunch and dinner, which means less overall time spent in the kitchen and more time eating. #win

#4 Chicken MarinaraÂ

Okay, this one is a TRUE one-dish meal, and you can find it on the blog and in my cookbook ‘One More Time’ the sequel to my other one-dish meals cookbook ‘One.’
And I can’t lie…this chicken marinara is the perfect comfort dish. When you need a dinner win, this is sure to be a family favorite while still being balanced and nutritious. You can’t ask for much else on a crazy summer day, right?!
It’s so easy to make, but it does have to be baked in the oven. Sorry to make you turn on your oven in the summer, but trust me, it’s worth it! Plus, it only takes about 30 minutes to make, and you can feed the entire family out of one dish.
