Counting macros in the summer is HARD. There’s so much fun, activities, and delicious food and snacks! And while balance is crucial, I LOVE noshing all day long without feeling sick afterward. IYKYK. That’s why I love having easy, one-dish meals on hand that won’t entirely wreck my kitchen and that will make dinner feel totally feasible, even if we’re not on our usual routine. So I did a quick round-up of 6 of my favorite macro-friendly summer one-dish meals for you and your family to enjoy!

Also if planning dinner feels like too much this summer, you can always use my dinner meal plan subscription to make dinner the EASIEST. Then, you can use these 6 macro-friendly summer one-dish meal ideas as great lunches instead.

#1 Quick and Easy Pickle Chicken Salad

Pickle Chicken Salad Macro-friendly One Dish Meal

This is a FAN favorite and for good reason. It’s simple to make, and then you can keep it in the fridge for 3-4 days for lunch or snacks all week. It’s perfect for summer because it requires no cooking 🙌 as long as you use rotisserie chicken! My family loves it so much that we usually do a double batch.

To make it easier, I love buying the big bags of rotisserie chicken from Costco, and then seasoning them up really quick in a hot skillet.  So if you love pickles and mustard, you can get all the details here

#2 Fresh and Healthy Taco Salad

Fresh and Healthy Taco Salad

This one is so easy to throw together and the perfect use of any leftover taco meat that you have on hand. If you need a recipe, you can get my FAV taco meat recipe here. But seriously, this is so good and fresh that you won’t even miss the tortilla…at least I don’t!

This recipe just makes one serving, so make sure to double it, or triple it, if you’re serving it for your family! The portions are BIG, but that doesn’t mean you want to share…

Get the recipe here! Enjoy.

#3 Cuban Breakfast Sandwich

Macro-friendly Summer One-dish Meals

This Cuban Breakfast Sandwich is technically a one-dish meal since it’s made with only one dish. BUT that isn’t usually what I’d consider a one-dish meal because I usually mean my one-dish meals are family meals that can all be served out of the same pan like casseroles, skillets, sheet pans, etc.

This one is not that because it requires some assembly post cooking, BUT I know that over the summer making breakfast can start to feel repetitive. This sandwich is a GREAT way to use leftover pork while still using the breakfast classics like eggs and English muffins. It’s a total win.

So although it’s not ‘technically’ a one-dish meal, I guess I’ll let it slide. Find out how to make it here! Yum.

#4 Sweet Potato Chipotle Rotisserie Chicken Skillet

Macro-friendly One-dish sweet potato skillet

Okay, if cooking on the stove isn’t your thing in the summer, I get it. But this chicken skillet is SO good that I couldn’t NOT add it. I mean…sweet potatoes can do no wrong IMO. I don’t think that needs explaining.

This does take about 40 minutes to make, but it’s all made in one pan and it’s HUGE! With 8 servings, you can definitely eat it for lunch and dinner, which means less overall time spent in the kitchen and more time eating. #win

If you’re obsessed with sweet potatoes just like me, then you need this recipe. Enjoy!

#5 Easy Dairy-Free Cava Bowl

Easy Dairy-Free Cava Bowl

This recipe was created to make one serving, but it’d be so easy to make into a big bowl to share or make multiples of…

The thing about Cava bowls is that they’re customizable, but I’m obsessed with the combo in this recipe…and I don’t think I’ll ever stop loving it. 😍

Best part? All you have to do is some simple chopping and tossing, and boom, you’ve got the perfect, balanced meal.  *chef’s kiss*

You can get the recipe here, but be warned, you’ll want to eat it every. single. day.

#6 Chicken Marinara

Macro-friendly Summer One-dish Meals Chicken Marinara

Okay, this one is a TRUE one-dish meal, and you can find it on the blog and in my cookbook ‘One More Time’ the sequel to my other one-dish meals cookbook ‘One.’

And I can’t lie…this chicken marinara is the perfect comfort dish. When you need a dinner win, this is sure to be a family favorite while still being balanced and nutritious. You can’t ask for much else on a crazy summer day, right?!

It’s so easy to make, but it does have to be baked in the oven. Sorry to make you turn on your oven in the summer, but trust me, it’s worth it! Plus, it only takes about 30 minutes to make, and you can feed the entire family out of one dish.

Enjoy all the cozy goodness here
