Roasted Halved Sweet Potatoes

I love sweet potatoes in general because you can play up their natural sweetness in a gooey casserole, or you can complement the sweet with some herby, savory flavors. For these roasted sweet potato halves, I went the simple, savory route and they turned out delicious!

Roasted Sweet Potato Halves Ingredients

This recipe is super simple and lets the natural flavor of the sweet potatoes really shine! Here are the ingredients you’ll need to make roasted halved sweet potatoes:

  • Sweet potatoes, washed and scrubbed (each of my potatoes weighed about 130g)
  • Olive oil spray
  • Coarse or fine sea salt 

As a note, the sweet potatoes will shrink when they bake so a serving of two halves of roasted sweet potato will be about 100g even though the original sweet potato was 130g. It may shrink more or less depending on cook-time, your oven, etc. If you want to be very precise with macros, you can make sure you know which 130g of raw sweet potatoes is designated for you, and then it doesn’t matter what they weigh after being baked, as long as you grab that portion.

How to Make Roasted Sweet Potato Halves

Ready to get cooking? Here’s how to make roasted sweet potato halves:

  1. Preheat the oven. Set your oven to 400 degrees F  and allow it to preheat as you prepare the sweet potatoes.
  2. Prepare the sweet potatoes. Line a rimmed baking sheet with parchment paper, and spray with a mist of olive oil. Wash, scrub, and then dry the sweet potatoes. Cut them in half lengthwise and spray with a light mist of olive oil. Place the sweet potatoes cut side down on the parchment paper and sprinkle the skins with salt.  
  3. Roast the sweet potatoes. Roast the sweet potatoes in the preheated oven for about 25-30 minutes (depending on the size of course). Flip them over and check if they’re done. You’ll know they’re done baking when the insides are soft and the edges are a little browned and caramelized.
  4. Serve. Let the sweet potatoes cool for a minute or two and enjoy!

Instructions

  • Wash, scrub, then dry the sweet potatoes. Cut them in half lengthwise and spray with a light mist of olive oil.
