- 2-3 cups arugula 70g
- 2 small oranges cara cara/blood/naval, peeled and sliced into thin rounds (115g)
- 2 Tbsp red onion sliced thinly (15g)
- ¼ cup avocado sliced (35g)
- 1 Tbsp walnuts chopped (10g)
- 2 Tbsp crumbled goat cheese 15g
- 1 Tbsp fresh mint chopped (2g)
- Salt and pepper to taste
Spread arugula onto a platter or into a shallow bowl. Top with thin slices of oranges, thinly sliced red onion, and avocado. Finish with chopped walnuts, crumbled goat cheese, and fresh mint. Season with salt and cracked pepper.
Serve with your favorite dressing. I highly recommend my “Sweet Mustard Vinaigrette”, or even just a drizzle of high quality vinegar! (It’s no secret I’m obsessed with the Baker and Olive fruit infused white balsamic vinegar options like Lemon, Peach, Mango… you can’t go wrong!) Pair this with some protein to make it a meal!
