- 2 Tbsp. red wine vinegar 30g
- 2 Tbsp. lemon juice 30g
- 1 frozen garlic cube
- 1/2 cup shallot or red onion sliced thinly (56g)
- 1/2 cup store bought tzatziki 120g
- 1/4 cup hummus 60g
- 5 cups lacinato kale finely chopped or food processed (150g)
- 2 cups green cabbage finely chopped or food processed (150g)
- 1¼ cup mini cucumber sliced thinly or diced (180g)
- 2 cups cherry tomatoes halved (320g)
- 1/2 cup fresh dill chopped (20g)
- 1 cup steamed lentils 200g
- 1/2 cup reduced-fat feta cheese 56g
- Salt and pepper to taste
Add vinegar, lemon juice, shallots, and garlic to a large serving bowl and let them marinate for a few minutes. Whisk in your tzatziki and hummus.
Remove woody stems from kale by ripping the leaves off. Chop kale and cabbage super fine using a knife OR give it a quick whirl in your food processor. Be careful not to over-process. We want it small but not a paste! Add them to the bowl along with the remainder of the salad ingredients. Toss well and enjoy as a side or with your favorite grilled protein thrown on top!
GF/DF: This is gluten-free. To keep it dairy-free, Trader Joe’s carries a fabulous vegan tzatziki. They also have a great dairy-free feta, but my favorite is the “Follow Your Heart” brand I find at my Vons or Stater Bros.
