- 2¼ cups rotisserie chicken 280g, finely chopped
- 1/4 cup low fat cottage cheese 60g
- 1/4 cup reduced fat cream cheese 60g
- 10 oz can Rotel 280g, drained well
- 2 Tbsp. salsa verde 30g
- 1/3 cup green onions 35g, chopped
- 1 cup cilantro 28g, chopped
- 2 tsp. chili powder
- 1 tsp. cumin
- 1 tsp. kosher salt
- 1/2 tsp. garlic
- 1/2 cup cheddar or jack cheese 56g, grated and divided
Preheat the oven to 375℉.
Add all ingredients (excluding half of the grated cheese) to a bowl and combine well. Spread the mixture into a shallow baking dish or cast iron skillet and top with the other half of the cheese. Bake for 25 minutes until golden brown and bubbly. Broil for the last few minutes if it needs more color.
Enjoy this as a dip with chips, or crackers. Or pile it onto tostadas, in tortillas, or over rice for a meal!
