Ingredients
2¼cupsrotisserie chicken280g, finely chopped
1/4cuplow fat cottage cheese60g
1/4cupreduced fat cream cheese60g
10ozcan Rotel280g, drained well
2Tbsp.salsa verde30g
1/3cupgreen onions35g, chopped
1cupcilantro28g, chopped
2tsp.chili powder
1tsp.cumin
1tsp.kosher salt
1/2tsp.garlic
1/2cupcheddar or jack cheese56g, grated and divided
Instructions
Preheat the oven to 375℉.
Add all ingredients (excluding half of the grated cheese) to a bowl and combine well. Spread the mixture into a shallow baking dish or cast iron skillet and top with the other half of the cheese. Bake for 25 minutes until golden brown and bubbly. Broil for the last few minutes if it needs more color.
Enjoy this as a dip with chips, or crackers. Or pile it onto tostadas, in tortillas, or over rice for a meal!
