Veggie, Feta, and Chicken Lavash Pizza

When I can't get myself to Blaze or I want to get my pizza fix for about a third of the carbs!  This is one of my all time favorite pizza combos these days. (The quantities I used are below but obviously this is one of those use-as-much-as-you-like kind of recipes.)

Ingredients

  • 1 Joseph's lavash bread (or other low carb flat-bread or tortilla)
  • 1-2 tsp chopped garlic
  • 1/4 cup jarred marinara (60g) Organic Victoria from Costco is my current fave, Trader Joes Rustico also has great macros... but 1/4 cup of any brand won't kill your macros.
  • 1/4 cup chopped grilled chicken or rotisserie (50g) whatever you've got!
  • 1 1/2 Tbsp. fat-free feta (20g)
  • 2 Tbsp. sliced red onion (20g)
  • 2 Tbsp. mushrooms (28g)
  • 1/4 cup cherry tomatoes (40g)
  • 2 Tbsp. roasted red peppers (28g)
  • 1 Tbsp. pepperoncinis (14g)
  • 2-3 Tbsp. thinly sliced peaches (20g) apples or pears or the more classic pineapple would also be good if you're into a sweet kick on your pizza like me!
  • 1/2 cup arugula
  • 1/2-1 tsp drizzle of balsamic glaze (3g)

Instructions

  • Preheat oven to 450
  • Lay out your lavash on a cookie sheet or pizza pan if you have one. Spread with 1-2 tsp of chopped garlic (as always, I use the frozen dorot cubes from Trader Joes or most grocers and soften in the microwave for like 8 seconds first.)
  • Spread with red sauce.
  • Top with chicken, feta, and veggies.  Finish with a good sprinkle of kosher salt, and a mist of olive oil spray.
  • Bake for 5-8 minutes or until the edges are brown and crispy!
  • Transfer to a large cutting board and cut in pizza wedges... or rectangles if you prefer.  Top with a big handful of arugula, another sprinkle of kosher salt, and a drizzle of balsamic glaze!

Notes

The middle does stay soft which doesn't bother me. But if you want it crispier all the way thru, you could bake the lavash first before you top it.
