Egg White Wrap with Sun Dried Tomatoes, Feta, and Arugula

A giant breakfast wrap that's so tasty and filling, but so light!  The fat's so low you could mix in one whole egg if you'd prefer.

Ingredients

  • 1 clove garlic
  • 1/3 cup chopped tomates (50g)
  • 1/4 cup chopped onion (40g)
  • 1/4 cup chopped bell pepper (40g)
  • 1 cup arugula or spinach (25g)
  • 1 slice ham I use “healthy ham” from trader Joes that has 0 fat- ridiculous name I know!
  • 1/2 cup egg whites (120g)
  • 1 Tbsp. reduced fat feta cheese (14g)
  • 2 tsp. fat free cheddar/mozzarella blend or other light cheese – this would also be good with the pepper jack laughing cow wedge I bet. (10g)
  • 1/2 Tbsp. sun dried tomatoes (7g) dry packed not jarred in oil- I get mine from Trader Joes
  • 1/4 small avocado (20g)
  • 2 tsp. fat-free sour cream mixed with Sriracha (10g) optional but I like a million layers of flavor!
  • 1 whole Joseph’s Lavash wrap

Instructions

  • Spray a pan with cooking spray and add a clove of garlic (I use the frozen Dorot cube of course.... lazy)
  • Add all your chopped veggies and sauté for a couple of minutes until soft with a good sprinkling of kosher salt. Add chopped ham.
  • Add arugula and let cook and wilt for another minute
  • Pour egg whites over and more salt and pepper and scramble… it’ll cook super fast. Turn it off and add feta and other light cheese if using. Cover and let melt.
  • Lay out your lavash and put your big egg scramble down the middle. Top with avocado, sundried tomates, and sriracha sour cream.
  • GENTLY roll like a burrito trying not to let it rip. If it starts to, just baby it because now you’re gonna grill the whole thing in your hot pan with cooking spray and THIS CURES IT! I think the only way to eat these wraps is toasted up in some form. Gives it a whole new life. Mine started to rip from the juicy eggs and I gently put that side down and it sealed it shut nice and brown and crispy. Do the same for the other side and it helps seal the seam of the burrito. Now it’ll even survive long enough for you to take pictures of it and THEN eat it.

Notes

  • I found my fat free cheese at Stater Brothers but I know Sprouts has a block of fat free cheddar.  It's certainly not like normal cheese, but mixed in to something like this that's warm it can totally work. Adds some texture and flavor and ONLY protein.
  • Obviously you can use whatever veggies, cheese, and meat you have and love. I think the best things about this were those sautéed veggies and the feta. More greens and a little more garlic couldn't hurt if you love garlic like me.
