Greek Pork Taquitos in the Air Fryer

Greek food. I can't get enough! These taquitos have all my favorite Greek flavors wrapped up in a crunchy corn tortilla.

Ingredients

  • 3 corn tortillas 10 carbs each
  • 1 Tbsp hummus
  • 1/4 cup steamed cauliflower rice optional, just a little bulk
  • 1/2 cup shredded Greek pork 90 g (recipe here)
  • 2 Tbsp reduced fat feta 14 g
  • Light mist of olive oil spray 2 g
  • 1/3 cup Greek salsa 75 g (recipe here)
  • 2 Tbsp store-bought tzatziki*
  • Pinch of pickled onions if you've got em!
  • Fresh mint

Instructions

  • Microwave corn tortillas between two wet paper towels for 1 minute so they’re very pliable. Lay on a plate or baking dish and spread each tortilla with 5 grams of hummus. Fill with 15 grams steamed cauliflower rice, 30 grams shredded Greek pork, and a pinch of feta. (So you’re dividing each ingredient amongst the tortillas.)
  • Carefully roll your taquitos up and spray with a light mist of olive oil spray and sprinkle with kosher salt. Place in the air fryer at 400 for 10 minutes.
  • Remove carefully from the air fryer, top with Greek salsa, and drizzle with tzatziki. If your tzatziki is too thick, thin it out with a little water or milk for drizzling. If you don’t have tzatziki, you can make a homemade version here. OR, just quickly whisk a little vinegar into some greek yogurt for a quick version. Add some mint or dill if you’re up for it!
