Left over carnitas is quickly turned Greek! And delicious and light in this lunch-time low carb Greek pita.

Ingredients

  • 1 Joseph’s pita I find them on Amazon and at my Walmart. They're extra low carb but any pita will work!
  • 1 cup leftover carnitas or any pulled pork. (140g)
  • 1/4 cup sliced cucumber (35g)
  • 2 Tbsp. red onion (20g)
  • 1 Tbsp. sundried tomatoes (7g) dry packed to avoid the oil if watching fat
  • 1/3 cup cherry tomatoes (50g)
  • 1 Tbsp. reduced fat feta cheese (14g)
  • 3 Tbsp. store-bought tzatziki (45g) I'm using Trader Joe's- but most store-bought options have similar and pretty good macros!

Instructions

  • Throw your leftover pork in a hot pan sprayed with cooking spray and fry up till crispy with some oregano. I don’t care if the pork was Mexican. Now it’s Greek.
  • Cut and warm your pita enough to open it, I like to toast mine. Fill it with everything and EEEEEEAT,
