Cobb Salad with creamy lemon basil dressing

An absolute staple for me when I want to keep carbs low, but enjoy JUST enough good, hormone-healthy fats.  Also a great one to double or triple when you're entertaining.  Line everything up on a large platter to wow your guests!

Ingredients

For the salad

  • 4 cups lettuces (250g) I do half mixed greens and half romaine, chopped
  • 1/3 cup cherry tomatoes (60g) halved
  • 1/3 small avocado (40g) chopped
  • 2 Tbsp. sweet bell pepper (25g) diced
  • 1 slice bacon I use the precooked from Costco for ease!
  • 1 hard boiled egg chopped
  • 1 Tbsp. Reduced-fat blue cheese (I find the Treasure Cave® brand at Stater Bros.®) (14g)
  • 2 Tbsp. red onion (15g) diced
  • 1/4 cup homemade creamy basil buttermilk dressing (recipe below) (50g)
  • Fresh basil chopped
  • Plenty of course salt and fresh cracked pepper

Creamy Lemon Basil Dressing (2 Tbs (30 g) of dressing= 24 cal/1f/2.3c/1.9p)

  • 1/2 cup non-fat Greek yogurt (120g)
  • 1/2 cup reduced-fat buttermilk (120g)
  • 2 tbs white balsamic vinegar (or sub champaign vinegar or even apple cider.) (30g)
  • A big handful of fresh basil (20g)
  • 2 cloves garlic or frozen cubes
  • 1/2 tsp onion powder
  • 1/2 a small avocado (40g)
  • 1/2 tbs parmesan (20g)
  • 2 tbs fresh lemon juice (30g)
  • 1 tsp honey (7g)
  • 3/4 tsp salt
  • 1/4 tsp pepper

  • This makes about 490 grams of salad.  That's big but I eat the whole thing with some added protein for a meal. Feel free to double it for the family to use as a side and log your portion in grams off of My Fitness Pal.  I've pre-loaded it by grams to provide that option! But the macros below are for this entire bowl if you don't want to bother weighing your final portion.
