Instant-Pot Pulled-Pork and Lighter Cornbread Waffles

Love this combo! More of an idea than a recipe.... but sharing anyway! Such a fun and quick way to make a new meal out of your leftover pork!

Ingredients

  • 1 box Trader Joe's Cornbread boxed mix!
  • ¾ cup fat free fairlife milk lower carb than lots of milk
  • 3 tbs canola oil you can use applesauce to lower fat more if you want
  • 46 g of egg whites 3 tbs, or 1 whole egg if you want to RAISE the fat. Ha!
  • Instant Pot BBQ pulled pork
  • Cilantro lime slaw
  • Stubbs or favorite low sugar barbecue sauce
  • No calorie Waldenfarms or other favorite low sugar pancake syrup *optional

Instructions

  • Just mix the first four ingredients together and cook in a sprayed waffle iron! You could totally play with this to lower carbs by stretching it with Flapjacked mix or Kodiak cakes… or even add protein powder if you want higher protein. We kept it simple and just lightened up the basic mix so I knew everyone would like them.
  • Top each waffle with 55 grams pulled pork, 30 grams slaw, 1/2 tbs bbq sauce, and I love a little drizzle of syrup!
  • 1 waffle alone (65 g of batter) came to 28c 4f 3.6p and 168 calories.
  • Makes 10 waffles.

Notes

  • Repeated from post: When I make these for my family, sometimes I'll have one with a cornbread waffle, and then build another out of a straight kodiak waffle or even a one-carb waffle if I don't want to use that many carbs.  I haven't tried it yet, but I'm sure it'd also be great on these pumpkin protein kodiak waffles!
