The Easiest Thai Zoodle Salad
Thai salad will always be one of my favorites. So fresh and vibrant and full of flavors and herbs… make it a super quick and light Thai ZOODLE salad and I’m in visual and textural salad heaven over here. It doesn’t seem like the shape of your veggies should really matter… but they do! Just such a fun twist, when you pull out the spiralizer.
This is essentially a variation of this Thai Salad we repeat regularly over here. I don’t even make my own dressing because I love these two bottled ones so much — and of course they just make my life easier so there.
What you need for this Quick and Light Thai Zoodle Salad
- Grilled Chicken (this sweet chili cilantro chicken uses the sweet chili sauce from Trader Joe’s and is perfect but any leftover chicken or even rotisserie will work!) (100 g)
- Butter lettuce (Trader Joe’s sells bagged… or you can chop up your own head) (75 g)
- Spiralized zucchini – (buy fresh from Trader Joe’s or spiralize your own. You could always grate in your food processor and have shreds instead of long zoodles if you don’t have a spiralizer. (200 g)
- Spiralized carrots (Trader Joe’s fresh, or spiralize your own) (40 g)
- Bell pepper sliced thin (30 g)
- Edamame (Trader Joe’s sells a frozen shelled I love) (30 g)
- Avocado (30 g)
- Shredded cabbage (89 g)
- Green onions or chives
- Radishes, chopped (don’t go out of your way, they’re just so pretty!)
- Jalapeno
- Cilantro (big handful!)
- Fresh mint (I keep a plant in my kitchen because it adds to so many meals!)
- Sesame seeds
- Plenty of salt and pepper (especially with those edamame and avocado in there.)
- 2 tbs Trader Joe’s Spicy peanut dressing (LOVE THIS)
- 1.5 tbs Newmans Own sesame Ginger dressing (also good and lower in fat so I like to mix the two to keep the fats low– but feel free to use just one of the dressings to simplify!)
I feel like fresh herbs in salads are underestimated… sometimes even when I add ones that don’t makes sense with the recipe– I end up obsessing over it. But this is the RIGHTFUL home for a huge bunch of cilantro and fresh mint (missing in my pictures because I was out! But ADD IT PLEASE YOU WON’T REGRET IT.)
A few extra additions
If you’ve got fat to spare… you can never have too much avocado, and almost any nut would be delicious… toasted peanuts, the slivered toasted almonds from my Trader Joe’s Must Have list... or the Spicy Thai Cashews from Trader Joes would be AMAZING in there… or — and don’t think less of me— those greasy little bagged wonton strips would NOT hurt it– I’m just saying.
