This low carb Greek Crunch Wrap. YES. It’s no secret that I live for my lunch-time turkey crunch wrap. We just got home from New York TONIGHT… where I’ve been eating pizza and cookies like a seven year old (because pizza and cookies)— but also like a giant New York man (because quantity)…. and I’ve got to say I cannot WAIT to have my classic, fail-proof LIGHT but AMAZING crunch wrap tomorrow. I’m a creature of habit when the habit is delicious. And I always have good deli meat on hand…. so it’s just something I can count on- and if it ain’t broke…!

But SOMETIMES I branch out and use favorite leftovers to make something extra special… like this Greek version. THIS is special. And when I’ve got all of the fixings lying around from these Greek copy cat cava grain bowls, or one of my ALL TIME FAVORITE MEALS… the Greek pork pitas... I refuse to let one spoonful of the greek salsa, or the tzatziki, or the pickled veggies go to waist.  So this is the PERFECT lunch to use up my scraps and also eat the yummiest thing in the universe.

You think I’m being dramatic.  But if I took a lie detector test while I ate this, I’d believe it thru and thru- swear it. Obsessed with these flavors. Put them in a crunch wrap and tally up the macros and it’s all too good to be true.

To make the wrap

Just like the turkey crunch wrap, I pile all the goodies in the middle:

  • Hummus
  • Tzatziki
  • Leftover grilled chicken
  • Cucumber salsa
  • Any pickled veggies lying around… or not!
  • Arugula
  • Lemon

Wrap…. pan-toast to seal and crisp it up. HEAVEN.

Low Carb Greek Crunch Wrap

There's no limit to what you stuff in a crunch wrap! But this Greek combo is definitely one of my top three!

Ingredients

Instructions

  • Lay out low carb wrap. In the center, spread the hummus, then top with chicken, cucumber salsa, pickled onions and cabbage if using, arugula, and a drizzle of tzatziki. Squeeze with lemon.
  • Heat pan to medium high heat, then spray with cooking spray.
  • Now carefully fold wrap starting at the bottom right corner, then going around counter clockwise, folding toward the middle. It takes me six folds to close the wrap and then carefully transfer and place seam side down in the hot pan. Let it cook for a minute or two, till it's browned and crispy and sealed up... then flip and brown the other side.

Notes

  1. Is your wrap breaking? The Cut Da Carb wraps can become pretty fragile and often crack a little in the process, but unless it's totally broken before I start, I can almost always salvage it if I can just GET it to the pan! Don't lose hope. It's worth it. They crisp up so nicely and the macros are insane.
  2. Logging: If you make this same wrap and want to log it directly from My Fitness Pal, just search "Lillie Eats and Tells Greek Crunch Wrap".
