Cauliflower Rice, Mango, Chicken Bowl with Light Chimichurri

Hardly a recipe but such a great light way to have a non-salad lunch!

Ingredients

Instructions

  1. Cook cauliflower rice according to package directions. I just microwaved my frozen bag.
  2. Combine chopped tomato, jalapeno, cilantro, red onion, salt, pepper, and a squeeze of lime to make your quick pico, add mango right to it or just pile both in your bowl. *
  3. Top “rice” with chicken, pico, mango, avocado, and lightened up chimichurri
